3/4 cup warm water (110° to 115°)
2 tablespoons butter, melted
1 tablespoon sugar
1/2 teaspoon salt
1 large egg
2 cups all-purpose flour
FILLING:
1 pound ground beef
1 medium onion, chopped
1 teaspoon garlic salt
1 can (16 ounces) kidney beans, rinsed and drained
2/3 cup water
2 tablespoons chili powder
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1-1/2 cups shredded cheddar cheese
1 large egg, lightly beaten

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the butter, sugar, salt, egg and 1-1/2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. 1 tablespoon Chinese five-spice powder
Kosher salt and freshly ground black pepper
3 pounds chuck roast, cut into 1 1/2-inch pieces
2 tablespoons salted butter
2 tablespoons olive oil
2 tablespoons minced ginger
1 generous tablespoon chili paste
5 cloves garlic, minced
1 bunch scallions, sliced, whites and greens separated
1/4 cup sherry
3 cups beef broth
1/4 cup low-sodium soy sauce
2 tablespoons honey
3 star anise pods
2 bay leaves
Cooked jasmine rice, for serving

Steps:

  • Preheat the oven to 275 degrees F.
  • Mix together the flour, five-spice powder and some salt and pepper in a bowl. Toss the beef in the flour mixture and set aside.
  • Heat the butter and olive oil in a heavy-bottomed pot over medium-high heat. Working in 2 batches, sear the meat on all sides until golden brown, 3 to 4 minutes per batch. Remove the meat to a plate and set aside.
  • To the pot, add the ginger, chili paste, garlic and scallion whites. Cook, stirring constantly, for 2 minutes. Deglaze with the sherry, scraping up any bits from the bottom of the pot. 4 3/4 to 5 3/4 cups all-purpose flour
1 tablespoon sugar
3 teaspoons salt
2 packages active dry yeast
2 cups water
2 tablespoons shortening
1 tablespoon water
1 egg white

  • 1. In large bowl, combine 3 cups flour, sugar, salt and yeast mix well. In small saucepan, heat 2 cups water and shortening until very warm (120 to 130°F.). Add warm liquid to flour mixture blend at low speed until moistened. Beat 3 minutes at medium speed. By hand, stir in an additional 1 1/2 to 2 1/4 cups flour to form a stiff dough.2. On floured surface, knead in 1/4 to 1/2 cup flour until dough is smooth and elastic, about 8 minutes. Place dough in greased bowl cover loosely with greased plastic wrap and cloth towel.
