Provided by Food Network Kitchen

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 17

1/2 teaspoon ground mustard
1/2 teaspoon smoked paprika
1 large egg
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1 pound ground beef (80/20)
2 tablespoons breadcrumbs
1 tablespoon vegetable oil
10 ounces baby bella mushrooms, sliced
2 sprigs thyme, leaves picked and stems discarded
3 tablespoons unsalted butter
1 small onion, thinly sliced
1 clove garlic, sliced
3 tablespoons all-purpose flour
2 cups low-sodium beef broth, hot
2 teaspoons Worcestershire sauce
2 tablespoons fresh parsley, roughly chopped

Steps:

  • For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
  • Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
  • For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
  • Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
  • Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
  • Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.

Time 45m

Yield 4

Number Of Ingredients 13

1 ½ pounds ground beef (90% lean)
⅓ cup plain dried bread crumbs
1 egg, lightly beaten
1 teaspoon seasoned salt
1 teaspoon Worcestershire sauce
2 cloves garlic, minced
1 tablespoon extra-virgin olive oil
2 cups sliced fresh mushrooms
¾ cup sliced onion
½ red bell pepper, sliced into strips
½ green bell pepper, sliced into strips
salt and ground black pepper to taste
½ cup beef broth

Steps:

  • Combine ground beef, bread crumbs, egg, seasoned salt, Worcestershire sauce, and garlic in a large bowl. Use your hands to lightly mix and combine the ingredients. Form into 4 equally sized patties and set aside.
  • Heat olive oil in a 12-inch nonstick skillet over medium-high heat until shimmering. Add mushrooms, onion, and bell peppers. Season with salt and pepper. Stir the vegetables quickly, moving around in the skillet until the onion is just beginning to soften, 4 to 5 minutes. Remove the vegetables from the skillet and keep warm.
  • Place beef patties in the same skillet and cook until browned, about 3 minutes per side. Add the vegetables on top of and around the patties. Pour in beef broth. Reduce heat to medium and cook until patties reach an internal temperature of 160 degrees F (71 degrees C) when tested with an instant-read thermometer, 4 to 5 minutes more.
  • Transfer the patties to serving plates and top with the vegetables. Allow liquid in the skillet to boil and reduce to about 1/2 cup. Drizzle 2 tablespoons of the skillet sauce over each serving. Serve warm.

Tips:

  • Choose the Right Beef: Opt for lean ground beef with a fat content of 80/20 or 85/15 for a juicy and flavorful patty.
  • Season Wisely: Don't be shy with the seasonings! A well-seasoned patty is the key to a delicious burger. Experiment with different combinations of salt, pepper, garlic powder, onion powder, and other spices.
  • Handle the Meat Gently: Overworking the meat can make it tough. Mix the ingredients just until combined, and avoid over-kneading.
  • Form Uniform Patties: Use a kitchen scale to ensure uniform patty sizes for even cooking. A standard burger patty should weigh about 4 ounces before cooking.
  • Create a Dimple: Make a small dimple in the center of each patty with your thumb. This will help prevent the patties from puffing up and creating a round shape while cooking.
  • Cook Over Medium Heat: Cooking the patties over medium heat allows them to cook evenly without burning. Avoid high heat, as it can quickly overcook the outside while leaving the inside raw.
  • Flip Only Once: Resist the urge to flip the patties multiple times. Flip them only once, after a nice crust has formed on the bottom side.
  • Use a Thermometer: To ensure perfectly cooked patties, use a meat thermometer to check the internal temperature. Aim for an internal temperature of 145°F (63°C) for medium-rare, 160°F (71°C) for medium, or 170°F (77°C) for well-done.
  • Let Them Rest: After cooking, let the patties rest for a few minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful patty.

Conclusion:

With careful preparation, cooking, and seasoning, you can create mouthwatering beef patties that will elevate your burgers to the next level. Experiment with different flavors and toppings to find your perfect combination. Whether you prefer a classic cheeseburger, a juicy mushroom Swiss burger, or a zesty bacon-avocado burger, these tips will help you create a delicious and satisfying meal that everyone will love. So fire up the grill, gather your ingredients, and get ready to enjoy the ultimate burger experience!
