1 pound ground beef
1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste

2 teaspoons dried basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.

25 1/2 lbs canned tomatoes, diced
11 5/8 lbs tomato paste
6 lbs water
4 lbs onions, dry peeled, chopped (4 3/8 lb before peeling)
7 ounces granulated sugar
3 3/8 ounces salt
1 5/8 ounces garlic powder
1/2 ounce sweet basil, crushed
1/2 ounce ground thyme
1/3 ounce oregano, crushed
1/4 ounce black pepper
8 whole bay leaves
80 lbs water, boiling
12 lbs spaghetti
2 1/2 ounces salt

Steps:

  • Cook beef in steam-jacketed kettle or stock pot until beef loses its pink color (CCP: 155F or higher), stirring to break apart.
  • Drain or skim off excess fat.
  • Add tomatoes, tomato paste, water, onions, sugar, salt, garlic powder, basil, thyme, oregano, pepper and bay leaves to beef.
  • Mix well.
  • Bring to a boil; reduce heat; cover; cook at low heat about 1 hour, stirring frequently.
  • CCP: Temperature must reach 140°F or higher.
  • Remove bay leaves before serving.

1 lb ground beef
1 lb link Italian sausage
3 (8 ounce) cans tomato sauce
2 (8 ounce) cans tomato paste
1 (14 ounce) can diced tomatoes (drained)
1 1/2 cups onions (diced)
1 cup bell pepper (diced)
1 cup mushroom (sliced)
1 cup red wine
3 garlic cloves (minced)
2 tablespoons olive oil
1 -2 tablespoon sugar
3 teaspoons basil
1 teaspoon black pepper
2 teaspoons marjoram (dried)
2 teaspoons thyme
1 teaspoon salt
1 teaspoon paprika
2 tablespoons mozzarella cheese (grated)

Steps:

  • Brown ground beef, season to taste with salt and pepper, drain and set aside.
  • Cut link sausage up into meatball size pieces, brown, drain, and set aside. I use Thomasville Hot. If making sauce for lasagna, remove sausage from casings and brown with the ground beef.
  • Sauté garlic, onion, and bell pepper in olive oil, just until the onions are translucent.
  • Add meat, tomato sauce, tomato paste, diced tomatoes, herbs and spices, mushrooms, sugar, and wine. I use fresh mushrooms, and a red burgandy for a deeper earthy flavor. Omit mushrooms if making sauce for lasagna.
  • Simmer on medium low for at least one hour, stirring occasionally.
  • When ready to serve, mix corn starch with water and add to sauce, along with both cheeses to thicken.
  • When cheese is incorporated, and sauce has thickened, serve over your choice of pasta or use as a meat filling for lasagna.

6 pieces stewing beef
3 Italian sausages
1/2 lb boneless rib
12 ounces tomato paste
30 ounces water
1/4 teaspoon oregano

1/4 cup onion, diced
1/2 loaf Italian bread (3 days old)
1 lb hamburger
2 eggs
1/4 cup romano cheese, Grated (a large handful)
1 dash garlic salt

  • Pour oil into skillet. Cook stew beef, sausages and ribs until brown.
  • Add onion and continue to cook until the onions turn golden brown.
  • Remove all meats except for the beef and put them in a dish and cover to keep warm. Add beef, onions, tomato paste, water, and spices, to a heavy bottomed dutch oven, mixing well.
  • Cover and cook 1½ hours. Return meats to pan and cook an additional ¾ hours.

2 normal sized cans tomato sauce (if you have paste add 1 can of water to thin out)
1 small bell pepper
2 tablespoons of minced garlic

red pepper flakes
4T sugar
olive oil
10 cloves garlic, finely chopped
2 lbs Roma tomatoes
1 large red bell pepper, diced
1 lb sliced white mushrooms
1 lb sliced crimini mushrooms
1 1/2 lbs yellow onion, chopped
4 oz sun dried tomatoes in oil
2 lb lean ground beef
1 lb mild Italian sausage
1 lb hot italian sausage
1 750 ml bottle red wine
8 15 oz cans of tomato sauce
3 15 oz cans of diced tomatoes
1 12 oz can of tomato pate
salt and pepper

Steps:

  • Using a large pan brown the meat. Sprinkle with 1 T of Italian seasoning and a couple of good shakes of red pepper flakes. Drain and set aside. Pour about 3 T of olive oil in pot, add garlic, 1 T of Italian seasonins and 2 shakes of red pepper. Over medium heat, saute until the garlic is frangrant. Add the onions and red bell pepper and continue to saute until the onions are translucent. Add another 1 T of Italian seasoning and salt and ground pepper. Add the mushrooms and continue to saute until they soften. Lower heat to medium. Add 8 cans of tomato sauce, the can of tomato paste and stir in the meat. Pour 2 glasses of wine, sip on one and add the other to the sauce. Slice the roma tomatoes and place in a food processor and puree with the 4 T of sugar, the sun dried tomatoes, several leaves of fresh basil and a dash of salt. Add the puree mixture to the pot. Place 3 cans of diced tomatoes in the food processor with 1 T of Italian seasonings. Pureee and add the top. Top off your wine and add the rest of teh bottle to the pot. Keep the heat at medium until it begins to bubble, then reduce to medium low. Cook for about an hour, stirring every 10 or 15 minutes. Taste and add seasonins if needed. Reduce heat to low and cook for several hours stirring every 20 or 30 minutes. Serve.
