Now's the time to start watching the grocery ads for whole sirloin tip roasts. They usually weigh about 10 pounds, so the cost of making the beef sticks is minimized considerably if you can find a deal on the sirloin. These make great gifts, when presented with a small jar of homemade mustard and a pack of hamemade crackers! Buy the roast, have the butcher trim all the fat and grind into hamburger. Package the meat and freeze until holiday season, if you wish. The liquid smoke is optional, but if you use it, go easy - a little is a lot, with this ingredient. Makes 10 beef sticks

Time 35m

Number Of Ingredients 9

2 Tbsp beef bouillon granules
2 Tbsp water
3 clove garlic (minced)
2 tsp cayenne pepper
1/2 tsp salt
1 tsp black pepper
1 1/2 lb beef sirloin, cut into 1/2 inch cubes
10 wooden skewers, soaked in water for 1 hour
2 Tbsp vegetable oil

Steps:

  • 1. Dissolve bouillon in water. Stir in the garlic, cayenne pepper, salt, and black pepper. Toss the meat in the marinade, cover, and marinate in the refrigerator for at least 2 hours.
  • 2. Preheat a grill for high heat.
  • 3. Skewer the beef cubes, using 6 to 8 pieces per skewer. Pour the oil onto a plate, and roll the skewers in it to coat them on all sides.
  • 4. Grill the skewers, turning frequently, until the beef has turned light pink, 12 to 15 minutes.

Tips:

  • Choose the Right Beef: Opt for leaner cuts like flank steak or top round for a healthier beef stick. This will also help reduce shrinkage during cooking.
  • Soak the Beef: Marinating the beef in a flavorful liquid, such as a mixture of soy sauce, Worcestershire sauce, and spices, tenderizes the meat and infuses it with flavor.
  • Use a Meat Grinder: If you don't have a meat grinder, you can coarsely chop the beef by hand. However, a meat grinder will give you a more consistent texture.
  • Season Aggressively: Don't be afraid to season the beef mixture generously. The flavors will mellow out during cooking, so it's important to start with a bold flavor profile.
  • Use a Collagen Casing: Collagen casings are the most common type of casing used for beef sticks. They're easy to use and produce a firm, snappy texture.
  • Cook the Beef Sticks Slowly: Cooking the beef sticks at a low temperature (around 180°F) for several hours helps render the fat and collagen, resulting in a tender, juicy beef stick.
  • Smoke the Beef Sticks (Optional): Smoking the beef sticks adds an extra layer of flavor and aroma. You can use a smoker or a charcoal grill to smoke the beef sticks.

Conclusion:

Making beef sticks at home is a rewarding and delicious experience. With a little planning and effort, you can create beef sticks that rival those found in stores. Experiment with different flavors and techniques to find your perfect recipe. Whether you enjoy them as a snack, a meal, or as part of a charcuterie board, homemade beef sticks are sure to be a hit. So, gather your ingredients, fire up your smoker or oven, and let's get started!
