1 box refrigerated pie crusts, softened as directed on box
1 pound beef top sirloin, flank or skirt steak, thinly sliced
Dash salt and pepper
1 (8-ounce) package sliced fresh mushrooms (about 3 cups)
1/2 cup onion, chopped
1/2 cup carrot, chopped
1 cup frozen sweet peas, thawed
2 tablespoons vermouth, if desired, or beef-flavored broth
1 cup full-fat sour cream
1 egg
1 tablespoon milk

Steps:

  • 1 box refrigerated pie crusts, softened as directed on box 1 pound beef top sirloin, flank or skirt steak, thinly sliced Dash salt and pepper 1 (8-ounce) package sliced fresh mushrooms (about 3 cups) 1/2 cup onion, chopped 1/2 cup carrot, chopped 1 cup frozen sweet peas, thawed 2 tablespoons vermouth, if desired, or beef-flavored broth 1 cup full-fat sour cream 1 egg 1 tablespoon milk

Tips:

  • Choose the right cut of beef: Flank steak, top sirloin, or chuck roast are all good options for beef stroganoff. Just be sure to slice the meat against the grain for tender results.
  • Use a good quality broth: The broth is a key flavor component in beef stroganoff, so don't skimp on it. Use a flavorful beef broth or stock, or even a combination of beef and chicken broth.
  • Don't overcook the beef: Beef stroganoff is best when the beef is cooked just until tender. Overcooking will make the beef tough and chewy.
  • Add the sour cream at the end: Sour cream is a classic ingredient in beef stroganoff, but it's important to add it at the end of cooking to prevent it from curdling.
  • Serve over egg noodles or mashed potatoes: Beef stroganoff is traditionally served over egg noodles, but it can also be served over mashed potatoes or rice.

Conclusion:

Beef stroganoff is a classic comfort food dish that is perfect for a weeknight meal. It's easy to make and can be tailored to your own taste preferences. Whether you like it with mushrooms, onions, or peppers, or you prefer a more simple version, beef stroganoff is a dish that everyone will enjoy.
