Provided by Julie Deily

Time 2h10m

Number Of Ingredients 16

2 teaspoons olive oil
1 1/2 pounds beef chuck roast (trim large pieces of fat off & cut into 1 inch cubes (bite-sized pieces))
salt and pepper
5 tablespoons unsalted butter
16 ounces mushrooms (quartered (I like using baby bellas or you can use white ones))
1 large sweet onion (chopped)
2 garlic cloves (minced)
2 teaspoons tomato paste
2 Tablespoons unbleached all-purpose flour
one 14.5 ounce can low sodium beef broth (or 2 cups)
1 teaspoon Dijon mustard
1/2 cup sour cream
2 Tablespoons chopped flat-leaf (Italian parsley)
12- ounce package No Yolks Extra Broad Noodles
3 tablespoons unsalted butter
salt & pepper

Steps:

  • Heat the oven to 375 degrees F.
  • Heat a large French oven with olive oil on medium heat, for about 2 to 3 minutes. Pat the meat dry with a clean paper towel and season with salt and pepper. Add to French oven and cook for 2 to 3 minutes on each side. Remove meat and place on a clean plate and set aside.
  • Add 5 tablespoons butter to the French oven and melt, at the same time scraping the bottom of the pot. Add mushrooms, onions, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook for 5 minutes, while stirring occasionally with a rubber spatula or wooden spoon.
  • Add garlic and cook for 1 minute. Add tomato paste and mix well, cook for 2 minutes. Add flour and mix well, cook for another 2 minutes, stirring pretty consistently so that the mixture doesn't stick to the bottom of the pot. Add beef broth and mix. Bring to a boil, stirring occasionally. Turn off heat.
  • Add cooked beef back to the French oven, cover and place in the oven for 1.25 to 1.5 hours at 375 degrees F, until beef is tender.
  • Cook the No Yolks Extra Broad Noodles according to the package instructions. Add 3 tablespoons butter, 1/4 teaspoon salt and a dash of pepper, mix thoroughly and set aside.
  • Remove French oven from the oven. Being careful with the lid because it will be extremely hot, use a regular large spoon, skim any fat off of the top of the sauce. Add the following ingredients one at a time and mixing thoroughly after each addition: Dijon mustard, sour cream and flat leaf parsley. Add noodles to bowls or dishes and add strogranoff on top.

BEEF STROGANOFF OVER BUTTERED PARSLEY-CAULIFLOWER "NOODLES"

Beef Stroganoff over Buttered Parsley-Cauliflower

If you are looking to save a few bucks and a little time, you can buy 2 pounds of pepper steak strips and cut that into bite-size pieces. The beef won't be quite as tender but the flavor will be great.

Yield 4 servings

Number Of Ingredients 13

4 tablespoons vegetable oil
2 pounds beef tenderloin
Salt and freshly ground black pepper
5 tablespoons butter
1 small onion, sliced
2 tablespoons flour
2 cans (about 3 cups total) beef consommé
2 tablespoons Dijon mustard
1 small head cauliflower
1/2 cup chicken stock or broth
3/4 cup chopped fresh flat-leaf parsley, divided
1 cup sour cream
6 cornichons or baby gherkins, chopped (optional)

Steps:

  • Fill a large skillet with 1 inch of water. Place the skillet over high heat and bring to a boil for the cauliflower "noodles."
  • Preheat a large skillet with 2 tablespoons of the vegetable oil (twice around the pan) over high heat. You will be searing the meat in this pan, so you want it to be screaming hot.
  • Thinly slice the meat and cut into 2-inch-long very thin strips. Season the meat with salt and pepper and add to the hot oil, spreading the meat out in an even layer. Sear the meat, caramelizing it, for about 2 minutes without touching it, then toss and continue to cook for another 2 minutes.
  • Remove the meat from the pan and reserve on a plate. Reduce heat on the burner to medium low. Cool the pan for a minute, then add 2 tablespoons of the butter to the skillet, melt, and add half of the sliced onion. Cook for 2 to 3 minutes, then add the flour, stirring to distribute. Cook the flour for 30 seconds. Whisk in the beef consommé and the Dijon mustard and turn the heat down to low, gently simmering for 10 minutes.
  • While the stroganoff sauce is cooking, prepare the cauliflower "noodles": With a paring knife, remove the stem of the cauliflower, trying to keep the head intact. With the cut side down on the cutting board, slice the cauliflower into 1/4-inch-thick slices. Stack those slices and cut them in half, lengthwise. Add some salt and the cauliflower "noodles" to the skillet with the boiling water. Cook for 2 minutes. Drain the cauliflower in a colander. Return the pan to the heat and add the remaining 2 tablespoons of vegetable oil, the remaining onion, salt, and pepper; cook for 1 minute.
  • Add the cauliflower and chicken stock to the onion, stir to coat, and cook for 3 minutes, or until the cauliflower is tender. Turn the heat off and add the remaining 3 tablespoons of butter and 1/2 cup of the chopped parsley. Toss to coat and reserve while you finish off the stroganoff.
  • Add the meat back to the pan with the stroganoff sauce. Add the sour cream, stirring to combine. Turn the heat back up to medium high and simmer for 2 to 3 minutes, to finish cooking the meat. Taste the dish, checking for seasoning, and arrange the beef stroganoff on a bed of the cauliflower "noodles." Garnish with the remaining 1/4 cup chopped parsley and the chopped cornichons.
  • For easy slicing of raw meat, pop it into the freezer for 10 to 15 minutes before starting to prepare the meal. This firms up the meat and you'll find that it will be easier to control the thickness of the slices.

Time 50m

Yield 4 serving(s)

Number Of Ingredients 10

1 lb lean beef, cubed
2 beef bouillon cubes
4 tablespoons sour cream
1 1/2 cups hot water
3 tablespoons flour
6 tablespoons butter
8 ounces mushrooms, sliced
1/2 cup chopped onion
salt and pepper
1 lb wide egg noodles

Steps:

  • Cook beef slowly in butter.
  • Dissolve bouillon cubes in hot water to make broth.

  • Season to taste.
  • Keep warm on lowest setting in skillet, 20 minutes.

  • Serve over cooked egg noodles.

Tips:

  • For the best flavor, use high-quality beef broth or stock. You can also use water, but the flavor will be less rich.
  • If you don't have sour cream, you can use plain yogurt instead. Just be sure to add a little bit of lemon juice or vinegar to balance out the flavor.
  • Buttered noodles are a classic side dish for beef stroganoff, but you can also serve it with rice, mashed potatoes, or egg noodles.
  • If you want to make a vegetarian version of beef stroganoff, you can use tofu or tempeh instead of beef.
  • To make a gluten-free version of beef stroganoff, use gluten-free noodles and tamari instead of soy sauce.

Beef stroganoff is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover beef.
