AMAZING CUCUMBER BASIL SALAD

Amazing Cucumber Basil Salad image

I created this salad because I had lots of fresh veggies and herbs from my garden that needed using up. It is so good, and because it makes its own dressing, it's very healthy as well. The flavor is best when left in the fridge overnight.

Tips for Making Beef Tenderloin Milanese with Spinach and Cucumber Salads:

  • For the perfect crust, use fine, dry breadcrumbs. Panko breadcrumbs can also work, but they will result in a coarser crust.
  • To keep the beef tenderloin juicy, cook it over medium heat and avoid overcooking. The internal temperature should reach 135°F for medium-rare or 145°F for medium.
  • If you don't have a meat mallet, you can use a rolling pin or the bottom of a heavy skillet to pound the beef tenderloin flat.
  • To make the spinach salad, use fresh, tender spinach leaves. Baby spinach works well for this recipe.
  • For the cucumber salad, use English cucumbers or Persian cucumbers. They have fewer seeds and a milder flavor than regular cucumbers.
  • If you don't have white wine vinegar, you can use apple cider vinegar or rice vinegar instead.
  • Serve the beef tenderloin Milanese with the spinach and cucumber salads immediately after cooking. The salads can also be made ahead of time and refrigerated until ready to serve.

Conclusion:

Beef tenderloin Milanese with spinach and cucumber salads is a delicious and elegant dish that is perfect for a special occasion. The beef tenderloin is cooked to perfection and the salads are light and refreshing. This dish is sure to impress your guests.
