oil for frying
1 3/4 cup all purpose flour
1 egg
1 teaspoon salt
1 teaspoon granulated garlic
1 12 ounce can light beer
1 medium eggplant (peeled, cut in half and then cut into strips)
1/4 cup sour cream
2 tablespoons mayonnaise
1 teaspoon curry powder
1/2 teaspoon garlic chili sauce
1/4 teaspoon salt

Steps:

  • Make the dipping sauce first by whisking all ingredients together in a bowl. Cover and refrigerate until ready to use.
  • Preheat oven to warm setting or 200 degrees. Place a cooling rack on top of a baking sheet.
  • Heat half an inch of oil in a large pot over medium heat to 350 degrees.
  • Whisk together flour, egg, salt and granulated garlic. Slowly whisk in beer. Mix just until a batter forms.
  • Working in batches, dip eggplant fries into the batter. Shake off any excess and then carefully add to oil. Fry until golden brown and crispy, about 2 minutes. Use a slotted spoon to transfer to the prepared cooling rack. Sprinkle with salt. Place in the oven to keep warm while you fry the remaining batches.
  • Once all eggplant is fried serve with curry dipping sauce.

Steps:

  • In a shallow bowl combine flour, egg, parsley, garlic powder, oregano, salt & pepper. Gradually add beer, stirring, until a thick batter forms. Add more or less beer depending on the desired consistency of the batter. In a heavy frying pan, heat oil (adjust amount, depending on the size of your pan, so that you have a couple of inches of oil) over medium-high heat. When oil is hot, dip eggplant in batter and fry, turning once to brown evenly on both sides. Drain on paper towels.

2 eggs
1 cup milk

2 cups vegetable oil for frying

  • In a medium bowl, mix together 1 1/2 cup flour and beer with a wooden spoon; let stand for at least 3 hours at room temperature.

Dip:
8 ounces chive and onion cream cheese
1 tablespoon chopped fresh dill
1 English cucumber, cut into chunks
1 to 2 teaspoons fresh lemon juice
Kosher salt and freshly ground black pepper

Eggplant:
2 eggplant, peeled and cut into fry-length spears (avoid the seeded center)
Vegetable oil, for brushing
1 cup all-purpose flour
1 tablespoon Greek seasoning blend
Batter:
2 cups all-purpose flour

Zest of 2 lemons
Kosher salt
About 12 ounces beer
Peanut or vegetable oil, for frying
Lemon wedges, for squeezing

Steps:

  • For the dip: In a food processor, add the cream cheese, dill, cucumber and 1 teaspoon of the lemon juice and pulse until smooth. Taste and add more lemon juice if needed. Season with salt and pepper. Refrigerate until ready to serve.
  • For the eggplant: Place the eggplant spears on a baking sheet and lightly brush with the oil just to coat. In a large bowl, whisk together the flour, Greek seasoning, a pinch of salt and a few grinds of pepper. Add the eggplant in batches and coat with the flour mixture, shaking to remove the excess, then remove to a plate.
  • For the batter: In a large bowl, whisk together the flour, Greek seasoning, lemon zest and a nice pinch of salt until combined. Slowly whisk in the beer until you achieve a pancake batter consistency; you may not use all of the beer. Allow the batter to rest 5 minutes. If it thickens, loosen with a bit more beer.
  • Heat a fryer filled with oil to the proper level or a pot with about 2 inches of oil to 365 degrees F.
  • In batches, dunk the flour-coated eggplant spears into the batter, shake off the excess and gently place in the oil. Fry until golden brown, 4 to 6 minutes, making sure to maintain an oil temperature around 350 degrees F. Remove the eggplant to a paper towel-lined plate and immediately spritz lightly with lemon juice and sprinkle with a pinch of salt. Serve immediately with the chilled dip.

This one tastes great, and the kids love it! Great finger food. Great as a side dish at dinner, or just a snack. I like dipping them in ketchup. But also good with ranch or honey mustard, or whatever dipping sauce you want!

4 large Eggplant, raw
2 cups all-purpose flour
1 (12 fluid ounce) can or bottle light beer
1 large egg
1 pinch garlic salt, or to taste

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Peel and cut eggplants into spears.
  • Combine flour, beer, egg, garlic salt, salt, and pepper together in a medium bowl. Be careful pouring the beer, so it doesn't get too bubbly; this just helps it to mix better. Be sure to stir, not beat, really well, until batter is smooth.

1/2 cup all-purpose flour or cornstarch
3 eggs, lightly beaten
2 cups fresh bread crumbs
1/2 teaspoon salt, plus additional for sprinkling eggplant
1 tablespoon Essence, recipe follows
1 small eggplant, cut crosswise into 1/4-inch thick slices and then quartered
Vegetable oil, for deep frying
Marinara sauce (optional)
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Place the flour, egg, and bread crumbs each in 3 small bowls. Add the 1/2 teaspoon of salt to the egg and whisk to combine. Season the bread crumbs with the tablespoon of Essence and stir with a fork or your hands to thoroughly combine.
  • Dredge each piece of eggplant in the flour, coating thoroughly and then shaking to remove any excess flour. Coat each piece with the egg, then dredge in the bread crumb mixture, pressing to make the bread crumbs adhere. Transfer the eggplant pieces to a rack or to paper towels to let them dry slightly before frying.
  • In a deep, heavy skillet heat 1/2-inch of vegetable oil to 375 degrees F. Fry the eggplant pieces, in batches if necessary, for about 1 minute on each side, or until golden brown. Transfer with tongs to paper towels to drain. Sprinkle lightly with salt before serving. Serve with marinara sauce, or as desired.

1 eggplant, thinly sliced crosswise into 16 rounds
2 tablespoons coarse salt
1 pound buffalo mozzarella, drained and sliced crosswise into 8 equal pieces
8 fresh basil leaves
3/4 cup all-purpose flour
2 large eggs, lightly beaten
2 1/2 cups fresh breadcrumbs
4 cups vegetable oil
Tomato Sauce, warmed

Steps:

  • Place eggplant rounds in an even layer on a baking sheet. Sprinkle with salt and let stand 10 minutes. Rinse under cold running water and pat dry with paper towels.
  • Place 1 piece of mozzarella on half of the eggplant, followed by 1 piece of basil; sandwich with remaining eggplant.
  • Heat oil in a deep saucepan until it reaches 325 degrees on a deep-fry thermometer. Place flour, eggs, and breadcrumbs each in separate shallow dishes. Coat each eggplant sandwich evenly with flour, shaking off any excess. Then dip in eggs, followed by breadcrumbs to coat.
  • Working in batches, gently place eggplant sandwiches into hot oil and fry until golden brown, 2 to 3 minutes. Transfer to a paper-towel-lined plate. Cut each sandwich into 4 equal portions; serve with tomato sauce.

2 eggplants, large
1/4 teaspoon salt
2 cups flour
1/2 teaspoon baking powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder (ground chiles, not the mix you use to make chili)
1 1/2 cups water
1 tablespoon vegetable oil

Steps:

  • Wash the eggplants and cut into 1 inch slices. Place the slices on a rack or in a colander, sprinkle with the salt, and let sit for 15 minutes. This will release Mix remaining ingredients into a batter.
  • When the oil is hot, dip a few pieces of the eggplant in the batter until well coated. Carefully place into the hot oil, and fry for 3-5 minutes on each side, until golden brown.
  • Remove from oil and place on paper towels to drain any excess oil.
