Time 1h55m

Yield 4 servings

Number Of Ingredients 19

3 medium beets
1/2 teaspoon salt
3 medium sweet potatoes
1 tablespoon margarine, cut into small cubes
4 boneless, skinless chicken thighs
3 tablespoons honey
2 ounces cola
1 ounce Irish whiskey
1 tablespoon Dijon mustard
1 tablespoon sriracha sauce
1 teaspoon ginger powder
4 tablespoons blended oil
2 teaspoons garlic, chopped
1 small yellow onion, small diced
1 bunch kale, chopped into 1-inch pieces
1 tablespoon fresh cilantro, chopped
1 tablespoon fresh parsley, chopped
1/2 tablespoon fresh rosemary, chopped
1/2 teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Boil the beets in salted water until softened, approximately 20 minutes. Using a rag and gloves, peel your beets. Cut into 1-inch wedges and set aside.
  • Cut the sweet potatoes into 1-inch wedges. Place in a roasting pan with approximately 1/2 inch water. Top with margarine, cover pan with foil and bake until al dente, 15 to 20 minutes.
  • Next, trim all fat off chicken thighs and discard. Set chicken aside. Whisk together honey, cola, whiskey, mustard, sriracha, ginger powder, 2 tablespoons blended oil and 1 teaspoon chopped garlic in a medium bowl. Set aside half the sauce for later, then add the chicken thighs to the remaining sauce. Mix until the chicken is fully coated, then place on a parchment-lined sheet pan and bake until sauce and chicken start to darken and the internal temperature is at least 165 degrees F, 15 to 20 minutes.
  • Meanwhile, add the remaining 2 tablespoons oil to a saute pan set on medium-high. Once oil is hot, add diced onion and remaining teaspoon chopped garlic and cook until the onions and garlic turn translucent, then add sweet potatoes. Saute until the outsides of the sweet potatoes crisp up, 7 to 10 minutes.
  • Toss beets and kale together in a mixing bowl. Add sweet potato mixture directly from the saute pan while hot. Mix all together, then add cilantro, parsley, rosemary and pepper and move to a sheet pan. Place in the oven to heat and crisp kale, approximately 5 minutes. Remove and plate with chicken. Top chicken with reserved sauce and serve.

BEETS AND SWEETS

Beets and Sweets image

This roasted vegetable side dish is sweet and delicious! Somehow I always forget how much I like beets. When a friend served this to us with roasted chicken we were hooked! The prep is a bit time consuming but well worth it. I wear latex gloves when handling beets, but if you don't mind temporary pink fingers, this is not...

Number Of Ingredients 9

3 sweet potatoes (the orange ones!)
2 beets
2 Tbsp olive oil
1 level tsp garlic powder (or to taste)
1 tsp salt
1/2 tsp black pepper
4 Tbsp butter
2 Tbsp real maple syrup
1 Tbsp fresh thyme leaves, chopped

Steps:

  • 1. Preheat oven to 425F. Spray a large sheet pan with cooking spray. Peel sweet potatoes and beets and cut into 1-inch dice.
  • 2. In a large bowl, toss the sweet potatoes, beets, olive oil, garlic powder, salt & pepper until well coated. Place on baking tray in a single layer and put in oven, roast for about 25 minutes.
  • 3. Meanwhile, in a small skillet, melt the butter with the thyme, and allow the butter to brown over medium heat. This will take about 4-5 minutes. Take care not to let it get too dark. It should smell nutty, not burnt!
  • 4. Stir in the maple syrup and remove the pan from the heat.
  • 5. After 25 minutes, remove the tray from the oven, pour the browned butter glaze over the vegetables and toss them to combine.
  • 6. Place the vegetables, (in single layer so they will brown, not steam) back in the oven for 10-15 minutes, then remove to a serving dish. Sprinkle with more chopped thyme if desired.

Tips:

  • Choose the right beets: Look for beets that are firm, smooth, and have a deep red color. Avoid beets that are soft, bruised, or have cuts.
  • Prepare the beets properly: To prepare beets for cooking, trim the tops and roots, and scrub the beets clean. If you are roasting the beets, leave the skin on. If you are boiling or steaming the beets, peel them before cooking.
  • Cook the beets until they are tender: Beets can be cooked in a variety of ways, including roasting, boiling, steaming, and microwaving. The cooking time will vary depending on the method you choose. Beets are done cooking when they are tender when pierced with a fork.
  • Add sweetness to the beets: Beets have a naturally sweet flavor, but you can add additional sweetness by adding sugar, honey, or maple syrup to the cooking water. You can also add sweet fruits or vegetables to the beets, such as apples, carrots, or sweet potatoes.
  • Balance the flavors: Beets have a strong flavor, so it is important to balance the flavors when cooking them. You can do this by adding acidic ingredients, such as vinegar or lemon juice, to the dish. You can also add salty ingredients, such as bacon or feta cheese, to the dish.

Conclusion:

Beets are a versatile vegetable that can be used in a variety of dishes. They are a good source of vitamins, minerals, and antioxidants. Beets can be roasted, boiled, steamed, or microwaved. They can be added to salads, soups, stews, and casseroles. Beets can also be used to make desserts, such as pies and cakes. With their sweet and earthy flavor, beets are a delicious and healthy addition to any meal.
