This is a tried and true roast recipe that I have enjoyed since my childhood!

2.5 lb beef roast
5 potatoes (peeled and sliced into wedges)
1 bag of baby carrots
2 medium onions (halved)
2 pkgs brown gravy mix
2 cups water

Steps:

  • Spray your crock pot with cooking spray
  • Place your roast in your 6- quart crock pot (I used my Hamilton Beach Programmable Insulated Slow Cooker.)
  • Surround your roast with your potato wedges, onion halves and carrots
  • Mix together one of your brown gravy mixes with 1 c cold water
  • Pour over your roast and veggies
  • Cover and cook on low for 8-10 hours (total)
  • An hour before serving, mix together your remaining brown gravy mix and 1 c cold water
  • Pour over roast and veggies
  • Cover again for the last hour of cooking.

2 tablespoons canola oil
1 boneless beef chuck roast (3 pounds)
1-1/4 cups water
3/4 cup beer or beef broth
1 can (8 ounces) tomato sauce
1/2 cup chopped onion
2 tablespoons sugar
1 tablespoon white vinegar
2 teaspoons salt
1 teaspoon ground cinnamon
1 bay leaf
1/2 teaspoon pepper
1/2 teaspoon ground ginger

Steps:

  • In a Dutch oven, heat oil. Brown roast on all sides. Meanwhile, combine water, beer, tomato sauce, onion, sugar, vinegar, salt, cinnamon, bay leaf, pepper and ginger. Pour over meat and bring to a boil. Reduce heat; cover and simmer until meat is tender, 2-1/2-3 hours., Remove meat and slice. Discard bay leaf. If desired, thicken pan juices for gravy. I love crock pot cooking, and am always in search of new recipes. Growing up in NE Wisconsin, we are lucky to have a large Belgian/German settling and influence on food. This recipe combines one of my favorite comfort foods with the convenience of a crockpot. This smells so good when I come home from work.

3 -4 lbs boneless beef rump roast
1 1/2 tablespoons oil
2 tablespoons butter
1/2 teaspoon thyme
1/2 teaspoon salt
4 cups onions, peeled, sliced
4 garlic cloves, minced
2 tablespoons light brown sugar
2 sprigs parsley
2 tablespoons white vinegar
1 bay leaf
1 teaspoon pepper
12 ounces beer
3 tablespoons cornstarch
1/2 cup water

Steps:

  • Saute the roast in oil and brown on all sides.
  • Add to crockpot.
  • Saute onions with the butter in the same pan you used for the roast and cook onions until medium brown.
  • Stir in garlic and cook 1 minute more, add to crockpot.
  • Add the beer to the skillet with the brown sugar, parsley, vinegar, bay leaf, salt, thyme, and pepper. Scrape up any brown bits in the bottom of the pan. Warm and pour over roast.
  • Cook on Low for 8-10 hours or until very tender. Remove juices to a saucepan (Strain if desired) and bring to a gentle boil.
  • Mix cornstarch with water until completely dissolved. Pour into pan juices and stir until completely dissolved, and juice has thickened. Serve over roast, and potatoes if you choose.
