GRANDMA'S BEST EVER BANANA NUT BREAD

Grandma's Best Ever Banana Nut Bread image

This is dark, rich and moist. It is sweet and flavorful and I am told unlike any other people have tasted. Some liken it Mimi's Cafe, but say it is better. My mother, Belen, who passed away at the age of 100 had been making this for as long as I can remember. Please follow the instructions regarding putting the vinegar in the milk in one cup and the baking soda in warm water in another before mixing it with other ingredients. It makes a difference.

Time 1h12m

Yield 1 loaf

Number Of Ingredients 9

1/2 cup butter or 1/2 cup margarine
1 cup sugar
1 egg, beaten
2 cups sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup mashed banana
3 tablespoons milk
1/2 cup chopped walnuts

Steps:

  • Grease a 9 X 5 X 3 inch loaf pan.
  • Beat butter or margarine, sugar and egg in a large bowl until fluffy.
  • Combine bananas and milk in a bowl.
  • Sift flour, baking powder, and baking soda onto wax paper.
  • Stir into sugar mixture alternately with banana-milk mixture.
  • Stir in nuts.
  • Turn into prepared pan.
  • Bake at 350 degree for 1 hour or until center springs back.
  • Cool in pan on rack for 5 minutes.
  • Turn out of pan and cool completely.

Tips

  • Use overripe bananas: The riper the bananas, the sweeter and more flavorful your banana nut bread will be.
  • Cream the butter and sugar together thoroughly: This will help to create a light and fluffy texture.
  • Gradually add the eggs: Adding the eggs one at a time will help to prevent the batter from curdling.
  • Do not overmix the batter: Overmixing will result in a tough, dense loaf of bread.
  • Let the batter rest for 10 minutes before baking: This will help the gluten in the flour to relax, resulting in a more tender loaf of bread.
  • Bake the bread at a moderate temperature: A temperature of 350°F (175°C) is ideal for baking banana nut bread.
  • Check the bread for doneness with a toothpick: Insert a toothpick into the center of the loaf. If it comes out clean, the bread is done.
  • Let the bread cool completely before slicing: This will help to prevent the bread from crumbling.
