BEST BREAD MACHINE SOURDOUGH

Best Bread Machine Sourdough image

This recipe gives a slightly dense bread with a slightly chewy crust and a little tang from the sour dough, depending entirely on your sourdough. A "San Francisco" sourdough starter is appropriate for this recipe.

Provided by todgeimer

Categories     Sourdough Breads

Time 3h15m

Yield 1 Two Pound Loaf, 10 serving(s)

Number Of Ingredients 7

1 cup sourdough starter, you must have a starter available
3/4 cup water, warm about 110F
1 tablespoon sugar
1 tablespoon active dry yeast (not rapid rise yeast)
3 cups bread flour
3 tablespoons oil
2 teaspoons salt

Steps:

  • Put first 4 ingredients in bread machine and stir gently. (yes, this works...).
  • Let sit for about 10 minutes. Starter should start to bubble a little.
  • Add flour, then spread oil and salt evenly over the flour.
  • Select basic course or following custom settings if your bread maker has them:.
  • Custom settings for Zojirushi BB-CEC20: Preheat - 20 Minutes ( I start cycle after mixing first four ingredients then add remaining three ingredients after ten minutes), Knead - 20 minutes, Rise1 - 40 minutes, Rise2 - 40 minutes, Rise3 - OFF, Bake - 58 minutes Medium or Dark crust setting ( I use medium), Keep warm - OFF.
  • Check a few minutes into kneading and add flour or water as needed to get a just slightly tacky dough that sticks to your fingers like a strong post it note and stretches smoothly without tears when kneading. Sourdough bread dough is a little gloopier then regular white bread.
  • See directions for making a starter or order a starter online.
  • Like all sourdough breads wait until at room temperature before cutting or insides will clump up and tear the insides out of the loaf.

BEST LOW CARB BREAD (BREAD MACHINE)

Best Low Carb Bread (Bread Machine) image

I found this recipe on the Low Carb Friends forum some time ago. I've baked this bread many times, and it's very good! The whole loaf only contains about 20 carbs, so when you slice it, divide the total carbs by the number of slices. (I usually get about 10 slices, which only amounts to 2 carbs per slice!) If the lid of your bread machine lifts slightly during the last 15 minutes of baking time, don't worry; when the bread is baked, the lid will lower. I prefer to eat this bread toasted slightly, and buttered.

THE BEST BREAD MACHINE CHALLAH

The Best Bread Machine Challah image

This recipe originally comes from Kosher by Design by Susie Fishbein. I've been making this challah every week for the last two months, and it makes a delicious, rich challah. I don't use the bread machine method, making the dough in my Kenwood mixer and giving the final knead by hand, then braiding the challah and baking it in the oven. I'm posting this as a bread machine recipe at the request of Miraklegirl. BTW, I don't use all the water called for in the recipe, I usually add a bit at a time until I'm happy with the consistency of the dough.

THE BEST RAISIN BREAD FOR BREAD MAKER / MACHINE

The Best Raisin Bread for Bread Maker / Machine image

I have tried no less than 5 different recipes and several variations of Raisin Bread recipes before finding what I think is the best tasting recipe. It is a culmination of trail and error using various recipes found on the internet and in Bread Machine Cookbooks. This recipe makes approximately a 1.5lb (750gm) loaf.

Provided by tinytrev

Categories     Breads

Time 2h40m

Yield 1 1.5lb loaf, 4-6 serving(s)

Number Of Ingredients 9

270 ml lukewarm water
1 tablespoon butter
3 cups plain white flour (I haven't tried bread flour)
1 tablespoon powdered milk
3 tablespoons brown sugar
1/2 teaspoon salt
1 tablespoon cinnamon or 1 tablespoon allspice
2 teaspoons dry yeast
1 cup raisins (I dust them in a little plain flour to coat them and prevent them sinking to the bottom of the loaf)

Steps:

  • Firstly, mix the flour, milk powder, sugar, salt and cinnamon together thoroughly in a mixing bowl making sure there are no lumps.
  • Now add the luke warm water and butter into the bread machine. (I divide the butter into four pieces and put one in each corner of the pan for easier mixing).
  • Then add the dry mixed ingredients into the pan. Make a small well in the centre of the dry mixture and add the yeast.
  • Set the Bread Maker / Machine to 'Sweet Bread' setting and wait for it to 'BEEP' (approx 15 minutes) before adding the raisins.
  • Wait until cooked and enjoy fresh or toasted with butter -- YUM !
  • ** If the mixture is too dry while mixing you can add a tablespoon of water. Alternatively if its too moist, a tablespoon of flour should sort it out nicely. **.

BEST BREAD MACHINE BUNS RECIPE - (4.6/5)

Best Bread Machine Buns Recipe - (4.6/5) image

Provided by Carolanne

Number Of Ingredients 7

1 1/4 cups milk
1/4 to 1/3 cup olive oil
1/4 cup white sugar
1 teaspoon salt
1 egg, lightly beaten
3 3/4 cups bread flour
1 tablespoon fast rising yeast or 1 tablespoon bread machine yeast

Steps:

  • Place the ingredients in bread machine pan in the following order: milk, oil, sugar, salt, beaten egg, and flour. Make a little well in the flour and add the yeast. For rolls, select Dough Setting and press start. Shape dough into rolls when cycle is completed and place dough rounds about 1 inch apart on a lightly floured cookie sheet. Cover and let rise about 45 minutes in warm draft free area. A slightly warmed oven with the light bulb on works well. When doubled in size, uncover and bake at 350°F for 15 to 17 minutes or until golden brown. Cool on cooling rack for 20 minutes. Can be stored in plastic bag for up to 1 week.

Tips:

  • Fresh ingredients: Always use fresh and high-quality ingredients for the best results. Fresh yeast, flour, and milk will produce a better loaf of bread than old or stale ingredients.
  • Proper measurements: Use a kitchen scale to measure your ingredients accurately. This will ensure that your bread has the right consistency and texture.
  • Water temperature: The temperature of the water you use to activate the yeast is important. Water that is too hot will kill the yeast, while water that is too cold will not activate it properly. The ideal water temperature for activating yeast is between 105°F and 115°F (40°C and 46°C).
  • Kneading: Kneading the dough is an important step in the bread-making process. Kneading helps to develop the gluten in the flour, which gives the bread its structure and texture. Knead the dough for at least 5 minutes, or until it is smooth and elastic.
  • Rising: The dough needs to rise twice before it is baked. The first rise is called the bulk rise, and the second rise is called the final rise. The bulk rise allows the yeast to ferment the dough and produce carbon dioxide gas. The final rise allows the dough to relax and develop its full flavor.
  • Baking: Bake the bread in a preheated oven. The oven temperature should be between 350°F and 375°F (175°C and 190°C). Bake the bread for the amount of time specified in the recipe, or until it is golden brown and sounds hollow when tapped.

Conclusion:

With the right ingredients, measurements, and techniques, you can make delicious and nutritious bread at home using a bread machine. Experiment with different recipes and ingredients to find your favorite combinations. Bread making is a fun and rewarding experience, and the results are worth the effort.
