Yield 10 to 12 servings

Number Of Ingredients 17

4 tablespoons (1/2 stick) salted butter
1 medium yellow onion, finely diced
1 clove garlic, grated
4 tablespoons all-purpose flour
1/2 teaspoon dry mustard
1/4 teaspoon cayenne
3 cups whole milk
4 ounces cream cheese, at room temperature
1/2 cup grated Parmesan
1 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1/2 teaspoon paprika
8 ounces processed cheese, cubed
3 cups grated sharp Cheddar
8 cups small broccoli florets
6 ounces diced pimentos, drained
2 1/2 cups cooked long-grain rice

Steps:

  • Preheat the oven to 350 F degrees.
  • In a large skillet, melt the butter. Add the onion and garlic and cook, stirring with a wooden spoon, until softened, 3 to 4 minutes. Sprinkle over the flour, dry mustard and cayenne and stir to mix it in well. Continue to cook for 1 minute.
  • Next, add the milk, stirring constantly; cook until thickened, about 2 minutes. Add the cream cheese and Parmesan, stirring until totally combined. Stir in the pepper, salt and paprika. Add the processed cheese, stirring until completely melted. Next, add 1 1/2 cups of the Cheddar and stir until melted. Then, fold in the broccoli and pimentos.
  • In a large baking dish, create a base with half of the rice. Top with half of the broccoli cheese sauce. Repeat with the remaining rice, then the remaining sauce. Sprinkle the rest of the Cheddar evenly over the top of the casserole. Bake until bubbly, about 30 minutes.

WILD RICE BROCCOLI CASSEROLE - BEST OF BRIDGE

Wild Rice Broccoli Casserole - Best of Bridge image

Number Of Ingredients 4

2 package Uncle Ben's Long Grain and Wild Rice (180 g)
2 heads broccoli, cut into bite sized pieces, blanched for 2 minutes in boiling water and drained
2 cans Mushroom soup (10 oz)
2 cups old cheddar, grated

Steps:

  • Cook the rice as directed - it's fine if the rice is tender and there's still extra moisture left.
  • Prepare the broccoli and in a medium bowl mix together 1 1/2 c. of the cheese with the soup.
  • Grease a 4 L casserole and spread half of the rice evenly on the bottom followed by half of the broccoli and then half of the soup mixture. Repeat the layers and top with the remaining 1/2 c. of cheese.
  • Bake at 350 for about an hour.

Tips:

  • Choose the right broccoli. Look for broccoli crowns that are deep green and tightly closed. Avoid crowns that are yellowing or have brown spots.
  • Wash the broccoli thoroughly. Cut the broccoli into small florets and rinse them under cold water. This will help remove any dirt or debris.
  • Cook the broccoli until it is tender-crisp. You can steam, boil, or roast the broccoli. If you are steaming or boiling the broccoli, cook it for 3-4 minutes, or until it is bright green and tender.
  • Use a sharp knife to chop the onion. This will help prevent the onion from becoming bitter.
  • Sauté the onion until it is translucent. This will help bring out the sweetness of the onion.
  • Use a large casserole dish. This will ensure that the casserole is not too crowded and that the ingredients cook evenly.
  • Season the casserole to taste. Add salt, pepper, and other spices to taste.
  • Bake the casserole until it is bubbly and golden brown. This will usually take about 30 minutes.
  • Let the casserole cool for a few minutes before serving. This will help the casserole set and make it easier to serve.

Conclusion:

Broccoli rice casserole is a delicious and versatile dish that can be served as a main course or a side dish. It is also a great way to use up leftover broccoli.
