THE ABSOLUTE BEST CHICKEN ENCHILADA RECIPE YOU'LL EVER TRY...

The Absolute Best Chicken Enchilada Recipe You'll Ever Try... image

I came across this recipe about three years ago on TOH's website. It originally called for 10 flour tortillas (6 inches), but I found my alteration to the recipe to be much better. I have also substituted on occasion pintos for black beans, and used Pace Picante sauce instead of the salsa. This recipe has become a staple at my house.

BEST EVER CHICKEN AND DUMPLINGS RECIPE - (4/5)

Best Ever Chicken and Dumplings Recipe - (4/5) image

Provided by AzWench

Number Of Ingredients 21

Dumplings:
2 cups flour
4 teaspoons baking powder
4 teaspoons sugar
1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon dried oregano
2 eggs
1 ⁄2 cup buttermilk, or as much as needed to form a stiff batter
1 ⁄4 cup butter, melted
Sauce:
2 tablespoons butter
1 tablespoon oil
1 tablespoon flour
1/2 cup diced carrot
1/2 cup diced celery
3 cloves garlic, minced
2 bay leaves
8 cups chicken stock
1/2 cup heavy cream

Steps:

  • To prepare Dumplings: Combine dry ingredients. Set aside. Combine eggs, buttermilk, and melted butter. Stir liquid ingredients into dry ingredients to form a stiff batter. Drop tablespoons into simmering stew. Cover and simmer 20 minutes. To prepare Sauce: In a Dutch oven, melt butter and heat oil over medium heat. Add carrot, celery, garlic, and bay leaves. Saute until the vegetables are soft, about 5 minutes. Stir in the flour to make a roux. Continue to stir and cook for 2 minutes to coat the flour and remove the starchy taste. Slowly pour in the chicken stock, 1 cup at a time, stirring well after each addition. Let sauce simmer until it is thick enough to coat the back of a spoon, about 15 minutes. Stir in heavy cream. Fold the reserved shredded chicken into the sauce and bring up to a simmer. Using 2 spoons, carefully drop heaping tablespoonfuls of the dumpling batter into the hot mixture. The dumplings should cover the top of the sauce, but should not be touching or crowded. Let the dumplings poach for 20 minutes until they are firm and puffy.

Tips:

  • Choose the right chicken: For the best flavor, use a whole chicken or chicken breasts that are free-range and organic. Avoid using frozen chicken, as it can be tough and dry.
  • Brine the chicken: Brining the chicken helps to keep it moist and flavorful. To brine the chicken, simply soak it in a mixture of water, salt, and sugar for several hours or overnight.
  • Use a flavorful marinade: A good marinade will help to infuse the chicken with flavor. There are many different marinade recipes available, so choose one that you like or experiment with your own. Some popular marinade ingredients include olive oil, lemon juice, garlic, and herbs.
  • Cook the chicken properly: The best way to cook chicken is to roast it in a preheated oven. Roasting the chicken allows the skin to crisp up and the meat to cook evenly. You can also grill, pan-fry, or poach chicken, but be sure to cook it to an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before carving: Once the chicken is cooked, let it rest for 10-15 minutes before carving. This will help the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

These are just a few tips for making the best chicken recipe ever. With a little planning and effort, you can create a delicious and memorable dish that your family and friends will love. So next time you're looking for a chicken recipe, be sure to try one of these. You won't be disappointed!
