Categories     Seafood     Fish

Time 35m

Yield 4

Number Of Ingredients 8

2 (8 ounce) fillets cod, cut in half
1 tablespoon Cajun seasoning
½ teaspoon lemon pepper
¼ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons butter
1 lemon, juiced
2 tablespoons chopped green onion (white part only)

Steps:

  • Stack about 15 charcoal briquettes into a grill in a pyramid shape. If desired, drizzle coals lightly with lighter fluid and allow to soak for 1 minute before lighting coals with a match. Allow fire to spread to all coals, about 10 minutes, before spreading briquettes out into the grill; let coals burn until a thin layer of white ash covers the coals. Lightly oil the grates.
  • Season both sides of cod with Cajun seasoning, lemon pepper, salt, and black pepper. Set fish aside on a plate. Heat butter in a small saucepan over medium heat, stir in lemon juice and green onion, and cook until onion is softened, about 3 minutes.
  • Place cod onto oiled grates and grill until fish is browned and flakes easily, about 3 minutes per side; baste with butter mixture frequently while grilling. Allow cod to rest off the heat for about 5 minutes before serving.

LEMON HERB MARINADE

Lemon Herb Marinade image

This easy Lemon Herb Marinade can be whipped up in 10 minutes. Zesty herbs and simple ingredients work together to elevate chicken, fish or pork. Feel free to switch up the herbs you use in this Lemon Herb Marinade. For example, for a lemon-rosemary marinade, consider substituting parsley for the basil and rosemary for the thyme. A good rule of thumb when mixing up marinades is, for fish, chicken and pork, light herbal notes tend to work well. This lemon and herb marinade is not to be missed.

Provided by Suzy Karadsheh

Categories     Entree

Time 22m

Number Of Ingredients 12

1.5 lb Cod fillet pieces, (4-6 pieces)
1/4 cup chopped fresh parsley leaves
5 tbsp fresh lemon juice
5 tbsp extra virgin olive oil
2 tbsp melted butter
5 garlic cloves, (minced)
1/3 cup all-purpose flour
1 tsp ground coriander
3/4 tsp sweet Spanish paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together the lemon juice, olive oil, and melted butter in a shallow bowl (do not add the garlic yet). Set aside.
  • In another shallow bowl, mix the all-purpose flour, spices, salt and pepper. Set next to the lemon sauce.
  • Pat the fish dry. Dip the fish in the lemon sauce then dip it in the flour mixture. Shake off excess flour. Reserve the lemon sauce for later.
  • Heat 2 tbsp olive oil in a cast iron skillet (or an oven-safe pan) over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add the fish and sear on each side to give it some color, but do not fully cook (about 2 minutes on each side). Remove the skillet from heat.
  • To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets.
  • Bake in the heated oven until the fish flakes easily with a fork (10 minutes should do it, but begin checking earlier). Remove from the heat and sprinkle chopped parsley. Serve immediately.

Tips:

  • Select the Freshest Cod: Choose cod fillets that are firm, opaque, and have a mild, sweet odor. Avoid any fillets that appear dull or have a fishy smell.
  • Marinate for Optimal Flavor: Allow the cod to marinate for at least 30 minutes up to overnight for deeper flavor infusion. However, do not over-marinate, as this can result in a mushy texture.
  • Choose the Right Marinade Ingredients: Experiment with different marinade ingredients to create unique flavor profiles. For a classic marinade, use a combination of olive oil, lemon juice, garlic, herbs, and spices. If you prefer a sweeter marinade, add honey or maple syrup. For a more savory marinade, use soy sauce or miso paste.
  • Consider the Cooking Method: The type of cooking method you choose will also influence the flavor of the cod. For a tender and flaky texture, bake or poach the cod. For a crispy exterior, pan-fry or grill the cod. If you're short on time, cod can also be microwaved or steamed.
  • Serve with Complementary Sides: Pair the cod with sides that enhance its delicate flavor. Roasted vegetables, steamed rice, or a fresh salad are excellent accompaniments.

Conclusion:

With its mild flavor and versatile nature, cod is a delicious and nutritious fish that can be prepared in countless ways. By following these tips and experimenting with different marinades, you can create cod dishes that are bursting with flavor and perfectly suited to your taste preferences. Whether you prefer a classic marinade or a more adventurous blend of ingredients, the possibilities are endless. So next time you're looking for a healthy and satisfying meal, give cod a try and let its delicate flavor shine through.
