Grandma's Cucumber and Onion Salad image

Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

Time 15m

Yield 4 serving(s)

Number Of Ingredients 6

3 cucumbers
1/2 onion
1 cup mayonnaise
1/4 cup sugar
1 tablespoon vinegar
milk

Steps:

  • Peel cucumbers and slice.
  • Slice onions.
  • In another bowl combine mayo, sugar, and vinegar. whisk until smooth.
  • Add 2 tablespoons of milk and whisk until smooth. You can add as much milk as you want, it will become less thick, every time you add the milk.
  • This is also good with tomatoes and romaine lettuce for a delicious time of garden salad!

Tips:

  • Choose the right cucumbers. For a crisp and refreshing salad, use fresh, firm cucumbers. Avoid cucumbers that are soft, wilted, or have blemishes.
  • Slice the cucumbers thinly. This will help them absorb the dressing better and make them easier to eat.
  • Use a sharp knife to slice the onions. This will help prevent the onions from tearing and making the salad bitter.
  • Soak the onions in cold water for at least 30 minutes before adding them to the salad. This will help remove some of the harshness of the onions.
  • Use a light and flavorful dressing. A simple vinaigrette or a sour cream-based dressing is a good option. Avoid using heavy or creamy dressings, as they can overpower the delicate flavor of the cucumbers and onions.
  • Season the salad to taste. Salt, pepper, and a pinch of sugar are all good options. You can also add fresh herbs, such as dill or parsley, for extra flavor.
  • Serve the salad immediately or chill it for later. Cucumber onion salad is best served chilled, but it can also be enjoyed at room temperature.
