2 sticks butter
1 1/4 cups warm water
2 packages dry yeast (recommended: Rapid Rise Fleishmann's)
2 tablespoons sugar, plus 1 cup
5 cups all-purpose flour
2 teaspoons salt
3 eggs
1 cup sugar
1/4 cup vegetable oil

Steps:

  • In a heat-proof bowl, melt 1 stick of the butter in the microwave and allow it to cool.
  • Add 1/4 cup warm (not hot) water, the yeast, and 2 tablespoons of sugar to a small bowl and stir slightly with fork. Set aside to proof.
  • In a mixing bowl of a stand mixer fitted with a dough hook, put 3 cups of the flour with the salt, eggs (preferably at room temperature), 1 cup warm (not hot) water, 1 cup sugar, and the cooled melted butter. Mix well.
  • Add the yeast mixture and gradually add the remaining 2 cups of flour and keep beating. Cook's Note: You may not need the whole 5 cups of flour; the stickier (not runny) the dough, the lighter the rolls.
  • Transfer the dough to a large bowl and pour about 1/4 cup of oil over the dough. Cover with a plate and let rise, at least double or more its original size, about 2 hours.
  • Preheat the oven to 350 degrees F.
  • After the dough has risen, transfer it to a floured surface and knead it a little. Roll out the dough about 1/4-inch thick (or thinner). Let the dough rest a few minutes while you melt the other stick of butter. Use a cookie cutter and cut out rolls. Dip each roll in melted butter, fold in half and put them on a sheet pan. Arrange them close together, filling up the pan.
  • Bake until nice and brown. Ovens vary, so maybe about 20 minutes.
  • Take the pan out of oven and immediately brush the rolls with butter. Transfer them to a serving dish and serve.

2 1/4 tsp active dry yeast
1/4 c lukewarm water
1 c milk
1 lightly beaten egg
3 Tbsp butter
2 Tbsp sugar
3/4 tsp salt
3 c all-purpose flour
egg white with 1 Tbsp water (for egg wash)

Steps:

  • 1. Start by activating the yeast. Pour the yeast and water into a bowl.
  • 2. Heat milk and butter in the microwave for 1 minute (do not boil).
  • 3. Add to the yeast and water, egg, sugar, salt, and one cup of the flour. Stir just a little.
  • 4. Add milk and butter (this cant be hot or it will kill the yeast). Stir and switch to a rubber spatula.
  • 5. Add remaining flour.
  • 6. Stir until you have a sticky, but knead-able, dough. The more you work the dough the less sticky it becomes.
  • 7. Pour out on floured surface.
  • 8. Knead for 6 - 7 minutes, only adding a little flour if it gets too sticky. If too much flour is added, an unpleasant crust forms.
  • 9. Spray a bowl with butter spray. Make a nice ball and put it in the bowl. Cover.
  • 10. Let it sit for 1 hour or until it doubles in size.
  • 11. Now after the dough has risen, remove the cover. Pour onto a floured surface and punch down the dough.
  • 12. Pat with hands shaping it into a square.
  • 13. Cut into 12 squares.
  • 14. Place in a greased pan they can touch (for greased pan, I use non-stick butter flavor spray in a can).
  • 15. After you place them in the pan simply let them rise approximately 20 minutes.
  • 16. Brush the rolls with the egg wash. Then bake in a 350 degree oven for 25 minutes.

3/4 to 1 c lukewarm water (100 degrees f.)
2 Tbsp butter (unsalted & softened)
1 large egg (room temperature)
3-1/2 c unbleached all purpose flour
1/4 c white granulated sugar
1-1/4 tsp salt
1 Tbsp instant yeast

Steps:

  • 1. Mix and knead all of the dough ingredients (mixer or bread machine) to make a smooth, soft dough
  • 2. Cover the dough. Let rise for about 1 hour, or until doubled in bulk. If using bread machine, just let dough or manual cycle complete it's job.
  • 3. Deflate the dough and divide into 2 balls and then divide each ball into 8 or 9 pieces. Round and shape each piece into a ball.
  • 4. Place 8 or 9 finished balls of dough into each of two 8"or 9" inch round cake pans that are lightly greased. Cover and let rise for about an hour or until very puffy.
  • 5. If desired, brush un-baked rolls with melted butter or egg wash (1 egg beaten with 1 Tablespoon of water) and sprinkle with herbs or small seeds.
  • 6. Bake in pre-heated 375 degree F. oven for 12 to 15 minutes. until golden. DO NOT OVER-BAKE !
  • 7. Remove rolls from oven and as soon as you are able to handle them, take rolls out of pans and brush with melted butter. Cool completely on a rack.
