2/3 cup sugar
3 tablespoons coconut oil, melted
2 eggs
1 1/2 cups mashed ripe bananas (3 medium)
1/3 cup original almond milk
2 cups gluten free all-purpose rice flour blend
3/4 teaspoon baking soda
1/2 teaspoon gluten-free baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 350°F. Grease bottom only of 9x5- or 8x4-inch loaf pan.
  • In large bowl, beat sugar and melted oil with electric mixer on medium speed until light. Add eggs; beat well. Stir in bananas and almond milk; blend well. In separate bowl, mix flour blend, baking soda, baking powder and salt. Stir into banana mixture just until moistened. Pour into pan.
  • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes in pan on cooling rack.
  • Loosen sides of loaf from pan; remove from pan, and place top side up on cooling rack. Cool completely, 1 to 2 hours, before slicing. Wrap tightly, and store at room temperature up to 4 days, or refrigerate.

3/4 cup butter (softened (or Earth Balance Buttery Cubes for vegan or dairy-free))
1 1/2 cups sugar
2 cups mashed bananas
2 eggs (duck eggs for me or EnerG egg replacer for plant-based diets)
1 tsp vanilla
2 cups unbleached flour (Bob's Red Mill Gluten-Free Baking Flour plus 1 1/2 tsp Xanthan Gum for gluten-free)
1 tsp baking soda
1 tsp salt
1/2 cup buttermilk or regular milk with 1 Tbl vinegar (let sit for about 5 minutes. Replace with Soy Milk if need dairy-free.)
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350. I have a convection oven setting, but I prefer to bake this on regular bake.
  • This recipe will make 2 loaves. We eat one fresh and either share the other one or freeze it.
  • Prepare loaf pans by spraying the bottom and sides with Pam and cutting wax paper to fit in the bottom of the pan. This will ensure easy removal of the finished product. To do this, place a loaf pan on top of wax paper. Trace around the bottom of the pan with a pen. Cut out traced shape and place in the bottom of the loaf pan. Works great for cakes as well. I prefer this method over greasing and flouring pans.
  • Cream butter and sugar. Add bananas, eggs (or egg replacer) and vanilla. Blend well.
  • In a separate bowl mix flour, baking soda, salt, and nuts together.
  • Add dry ingredients alternately with buttermilk (or substitute)
  • Be careful not to over mix. A quick bread should be tender, over mixing will toughen the final product.
  • Pour into prepared loaf pans
  • Bake for 50-60 minutes. Test with a toothpick or gently touching top center, it should gently spring back.
  • Set on cooling racks for 10 minutes.
  • Run a knife around edges and carefully remove from pan. Remove wax paper and let cool to room temperature

This is very easy to make, contains no egg or milk. I use gluten free all purpose flour and it comes out totally fabulous! The recipe is adjusted from 'My favourite Banana Bread Recipe - it has No Eggs' I found on the web! The recipe is only enough for a petite loaf pan (about 5x3 inches). Double the recipe for a standard size pan.

This is a modification of my favorite regular banana bread from my "Home Baking" cookbook. I made it gluten free and Dairy free so my nephew could eat it and it turned out GREAT! My kids, who don't usually like my G.F. food actually told me this was the best banana bread they had ever eaten, even before they knew it was G.F. I used my own mixture of G.F. flour which I will put in a note at the end of the recipe or you can make up your own. Happy eating!

2 1/4 cups gluten free flour
1 teaspoon baking soda
1/2 tablespoon xanthan gum
1 teaspoon salt
2/3 cup sugar
4 bananas, very ripe, I used frozen then thawed with juice
1 teaspoon pumpkin spice
1 tablespoon vanilla
1/2 cup rice milk, vanilla
3 tablespoons coffee, liquer or 3 tablespoons dark rum
1/4 teaspoon rice vinegar

  • Pre-heat oven to 375.
  • spray bread pan with a cooking spray or coat with oil.
  • combine dry ingredients in a bowl.
  • In a blender, blend the wet ingredients.
  • In a large bowl, using an electrical mixer, alternate the wet and dry ingredients mixing thoroughly (The dough will be very thick).
  • Scoop into bread pan, mini-loaf pan or muffin pan, and bake at 375 for 35-40 minute for a regular loaf, 25-30 for mini-loafs or 15-20 minute for muffins.
  • Note: You can add 1 cup sweetened coconut, chocolate chips or nuts for added variety.
  • Flour mixture: 1 cup Sweet Sorghum, 1 cup Brown Rice, 1/2 cup Coconut flour, 1/2 cup tapioca starch, 3 Tbs. Buckwheat flour.

Super moist, sturdy-yet-tender, and full of flavor. This classic banana bread recipe hits all the marks - no dairy necessary!

4 very ripe medium bananas
1/2 cup granulated sugar
1/2 cup dark brown sugar
1/2 cup canola oil*
2 large eggs
2 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon fine-grain sea salt

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Grease a standard-size loaf pan (mine is 4.5" x 8.5"). Set aside.
  • To a large mixing bowl, add the bananas. Using a potato masher, smash until as smooth as possible. Stir in the sugar and canola oil. Add the eggs and whisk together until smooth. Whisk in the vanilla.
  • Set a fine-mesh sieve over the bowl. Add the flour, baking soda, cinnamon, and salt to the sieve. Sift over the wet ingredients. Using a spatula, fold the dry ingredients into the wet, just until combined.
  • Pour into the prepared loaf pan.
  • Bake until middle is set and a toothpick inserted into the middle comes out clean, 45 - 55 minutes (if you're using a larger pan than my 4.5" x 8.5" pan, start checking at around the 45 minute mark. For the smaller pan, it'll take a bit more time to cook in the middle - closer to 55 minutes).
  • Remove from oven and let the loaf cool in the pan for about 10 minutes. Use a butter knife to loosen the sides of the loaf then gently invert the pan to remove the loaf. Let cool on a wire rack.
  • Wrap in plastic wrap to store. Bonus: The plastic wrap also makes it nice and moist. Yum!
