1-1/2 tablespoons vegetable oil
4 round sandwich rolls
1 large tomato (cored and sliced)
Romaine lettuce leaves
3 cloves garlic
2 tablespoons finely chopped onion
1/4 cup orange juice

1/4 tsp paprika
2 cloves garlic
1.5 cup cherry tomatoes
1/2 cup jarred roasted red peppers
1/2 cup black olives
1/4 cup green olives
1/4 cup capers
1 lemon, half squeezed and half for garnish
2 sprigs of rosemary
7-8 sprigs of thyme
3-4 sprigs of oregano
2 Tbsp flour
Salt to taste
Pepper to taste

  • Start by finely chopping olives, capers, roasted red peppers and garlic. Halve the cherry tomatoes. Finely chop fresh herbs.
  • Heat all of olive oil, except for 2-3 tablespoons, in a pan over medium heat. Add in cherry tomato halves and garlic and give it a good stir. Cook till the garlic starts getting aromatic, about two minutes. Stir in chopped roasted bell peppers and cook for 1-2 minutes. Mix in the chopped herbs. Give it a mix. Add chopped olives and capers and cook for a couple more minutes. Stir in a splash of lemon juice and drizzle a little bit more olive oil.

  • Heat the remaining oil in a skillet over medium high heat. Add grouper and cook 10 minutes per inch thickness, turning halfway through.
  • Plate the grouper and top it generously with prepared tapenade. Garnish with some more fresh herbs and lemon wedges.

Tips:

  • Use fresh grouper fillets. Fresh grouper has a mild, sweet flavor and a firm texture that holds up well to cooking. Frozen grouper can be used, but it may have a slightly different flavor and texture.
  • Season the grouper fillets with your favorite seasonings. Salt and pepper are always good choices, but you can also add other spices, such as garlic powder, onion powder, or paprika.
  • Cook the grouper fillets until they are cooked through. The best way to do this is to use a meat thermometer to check the internal temperature of the fish. The fish is cooked through when it reaches an internal temperature of 145 degrees Fahrenheit.
  • Serve the grouper fillets on your favorite bread or bun. A classic grouper sandwich is served on a toasted bun with lettuce, tomato, and tartar sauce, but you can also get creative with your toppings. Try adding avocado, bacon, or grilled pineapple to your sandwich.

Conclusion:

The grouper sandwich is a delicious and versatile dish that can be enjoyed for lunch or dinner. With its mild flavor and firm texture, grouper is a great fish to cook with, and it pairs well with a variety of toppings and sauces. Whether you are a fan of classic grouper sandwiches or you are looking for something new to try, there is sure to be a grouper sandwich recipe that you will love.
