1/2 small red onion, diced small
1 tablespoon distilled white vinegar
4 ripe Hass avocados
1/4 cup lime juice (about 2 limes)
1 jalapeno, minced (seeds and membranes included if you prefer heat or removed for a milder version)
1 clove garlic, grated
1 teaspoon kosher salt
1/2 cup lightly packed cilantro leaves, finely chopped (about 1/4 cup finely chopped)
Tortilla chips, for serving

Steps:

  • Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
  • Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
  • Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.

3 teaspoons garlic, minced (I just usually use the jar garlic cloves that are already minced)
5 tablespoons cilantro, chopped fine
2 jalapeno peppers, chopped fine
1/2 onion, chopped fine
1/2 tomatoes, chopped fine
1/2 lemons, juice of or 1/2 lime, juice of
salt

Steps:

  • chop everything really well and add the peeled and seeded avacados and mix and mash well.
  • Then add the lemon and then the salt to taste.
  • Mix well and put in tight container.

2 ripe avocados (small bumpy ones, Not Large smooth ones)
2 minced garlic cloves
1/2 cup diced onion (yellow or red onion)
1/8 teaspoon white pepper
1 teaspoon kosher salt
1 lime, juice of

Steps:

  • Mince garlic, dice onions (use more if necessary). Cut avacados and scoop out contents into glass bowl. Add onion and garlic. Using 2 knives cross-cut mixture until you have small chunks, then mash with a fork. Squeese in 1/2 the lime, white pepper and salt. Taste, and use remaining lime juice if needed. Chill covered.
  • Garnish for serving with a few pieces of cilantro and small dices of tomato.
  • Serve with tortilla chips or as a side with Mexican dishes.

2 limes, juiced
2 serrano chile peppers, or to taste
2 limes, juiced
salt to taste
4 ripe avocados, peeled and pitted
¼ cup chopped fresh cilantro
¼ cup pomegranate seeds, divided
1 sprig cilantro for garnish

Steps:

  • Combine the onion with the juice of 2 limes in a small bowl; allow the onion to soak in the lime juice for 2 hours. Strain through a fine-mesh sieve and discard the lime juice. Set the onions aside.
  • Grind the serrano chile peppers, the juice of 2 limes, and salt together in a food processor until smooth; add the avocado and continue processing until creamy and smooth. Transfer the mixture into a small serving bowl; fold the soaked onions, chopped cilantro, and about half the pomegranate seeds into the avocado mixture. 4 Hass avocadoes
1/2 red onion, diced
1/2 orange bell pepper, chopped
1/2 fuji apple, diced
2 roma tomatoes, chopped

I found this recipe in an old James Beard cookbook over 25 years ago. People beg me to make it. It's simple and easy and...addictive! Make this appetizer right before serving. To preserve any leftover guac, store it in a container with a minimum of surface area exposed. Smooth out the top of the guac and put plastic wrap directly onto it to minimize oxidation (the browning of the guac). Seal the container tightly.

2 ripe avocados (the small bumpy ones, not the large smooth ones)
2 large garlic cloves, minced
1/2 cup yellow onions or 1/2 cup red onion, finely diced
1/8 teaspoon white pepper
1 fresh lime

  • Mince the garlic (add more or less to taste).
  • Dice the onion (ditto).
  • Cut avocado in half and twist to separate. Stab the pit with the long sharp edge of your knife: twist it, and the pit will come right out attached to the knife.
