FRIED RICE

Provided by Anne Burrell

Time 40m

Yield 4 servings

Number Of Ingredients 14

Canola oil
1 small onion, chopped
1 medium carrot, chopped
Piece fresh ginger, grated
2 cloves garlic, chopped
4 scallions, chopped
1/2 pound boneless, skinless chicken thighs, cut into 1 1/2-by-1/2-inch strips
1 cup frozen shelled edamame
1/2 bunch fresh cilantro, chopped (reserve some whole leaves for garnish)
4 cups cooked white rice
1/4 cup soy sauce
2 tablespoons rice wine vinegar
2 tablespoons sambal oelek or Asian chile paste, optional
4 large eggs

Steps:

  • Coat a large saute pan generously with canola oil (it is FRIED rice) and toss in the onion and carrot; bring the pan to medium-high heat. Cook for 6 to 7 minutes, stirring frequently.
  • Stir in the ginger, garlic and scallion whites and cook for 1 minute more.
  • Toss in the chicken and cook until no longer pink and beginning to brown, about 4 minutes. Add the edamame and chopped cilantro and increase the heat to high. Add the rice to the pan and stir to combine, then let sit and get a little crunchy on the bottom. Toss occasionally, but be sure to give it a chance to get a little crispy, 3 to 4 minutes, and then repeat-resist the urge to stir it too much or it will just get soggy.
  • In a small bowl, combine the soy sauce, vinegar, and sambal, if using, and add it to the rice, cooking over high heat, 1 to 2 minutes.
  • Meanwhile, coat a medium nonstick saute pan lightly with canola oil, add the eggs, and bring to medium heat. Cook the eggs until the whites are cooked through but the yolks are soft and runny, 3 to 4 minutes.
  • Transfer the rice to serving plates and top each with an egg, a sprinkle of the whole cilantro leaves, and scallion greens.

WORLD'S BEST FRIED RICE

Categories     Ham

Time P1DT7m

Yield 2-4 serving(s)

Number Of Ingredients 10

4 cups cooked rice
2 tablespoons canola oil
4 eggs (beaten)
2 tablespoons canola oil
1 cup ham (diced)
1/4 cup soy sauce
2 tablespoons oyster sauce
2 tablespoons water
1 cup frozen peas (thawed)
1 cup carrot (peeled, diced)

Steps:

  • Prepare rice. Chill overnight.
  • Heat oil in a wok.
  • Add eggs. Cook until set. Remove to a plate. Chop.
  • Wipe out wok. Heat oil until very hot.
  • Add rice and ham. Stir-fry 1 minute.
  • Combine the soy sauce, oyster sauce and water.
  • Add to wok. Stir-fry 1 minute.
  • Add peas, carrots and eggs. Stir-fry 2-3 minutes.

Tips:

  • Use the right rice. Day-old rice is best for fried rice, as it's less likely to clump together. If you're using fresh rice, spread it out on a baking sheet and let it dry for about 15 minutes before cooking.
  • Use high-quality ingredients. The better the ingredients you use, the better your fried rice will taste. Look for fresh vegetables, high-quality meat or seafood, and flavorful sauces.
  • Don't overcrowd the pan. When you're cooking fried rice, it's important to give the rice plenty of room to cook. If you overcrowd the pan, the rice will steam instead of fry, and it will end up mushy.
  • Use a well-seasoned wok or large skillet. A well-seasoned wok or large skillet will help the rice cook evenly and prevent it from sticking.
  • Cook the rice in batches. If you're making a large batch of fried rice, it's best to cook the rice in batches. This will help ensure that the rice cooks evenly.
  • Don't overcook the rice. Fried rice should be cooked just until the rice is tender and slightly browned. If you overcook the rice, it will become mushy.
  • Add the sauce last. The sauce is the final touch to fried rice. Add it just before the rice is finished cooking, and stir to combine.

Conclusion:

Fried rice is a delicious and versatile dish that can be made with a variety of ingredients. With a little practice, you can make restaurant-quality fried rice at home. So next time you're looking for a quick and easy meal, give fried rice a try.
