2 cups Basmati rice, rinsed (see notes)
Extra virgin olive oil
1 red onion, chopped
1 red bell pepper, cored and chopped
2 garlic cloves, minced
1 cup frozen peas, rinsed quickly to separate
½ cup packed chopped fresh parsley, more for later
Kosher salt
1 tsp coriander
3/4 tsp mild chile pepper (I used Aleppo pepper flakes)
½ tsp cumin
½ tsp paprika
¼ tsp ground turmeric
2 1/4 cups water
Scant 1 lb large shrimp, thawed if frozen, peeled and deveined

Steps:

  • Rinse the rice well and place it in a large bowl. Cover with water and let it soak for 15 to 20 minutes or until you can easily break one grain of rice. Drain well.
  • In a large deep pan (with a lid), heat 3 tbsp extra virgin olive oil over medium heat. Add the onions, bell peppers, garlic, peas, and parsley. Season with kosher salt. Cook for 3 minutes or so, tossing regularly. Add coriander, Aleppo pepper, cumin, and paprika. Cook for another 2 to 3 minutes or so, tossing occasionally, until the vegetables have soften a bit.
  • Add the rice (well drained) and season with a good pinch of kosher salt. Add water. Bring to a boil until the liquid has reduced by about 1/2 (you should be able to see the rice, liquid should be barely covering the top). Turn the heat to low. Cover and let the rice cook for 15 to 20 minutes or until fully cooked and not hard nor chewy.
  • While the rice is cooking, pat the shrimp dry and toss with a bit of kosher salt.
  • Uncover the pan and add the shrimp nestling it into the rice. Cover and cook for 3 to 5 minutes more or until the shrimp is pink and fully cooked.
  • Garnish with fresh parsley and serve!

1 1/2 lbs small shrimp, shelled,reserving the shells,and deveined
1/4 cup butter
2 cloves garlic, halved
1/3 cup finely chopped onion
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
3 ounces chopped mushrooms
1/4 cup finely chopped celery
2 teaspoons sweet paprika
3 tablespoons all-purpose flour
1 tablespoon tomato paste
2 tablespoons sour cream
1/4 teaspoon Tabasco sauce, to taste
rice, ring (recipe is in my cookbook)
1/4 cup minced fresh parsley

Steps:

  • Rinse shrimp well and pat dry on paper towels.
  • In a bowl, rinse reserved shells well in several changes of water, drain them in a colander.
  • Combine them with 2 cups water in a saucepan.
  • Bring to boil and simmer mixture for 20 minutes.
  • Strain broth through a sieve lined with a dampened paper towel (there should be about 1 ¼ cups of broth, if not, add enough water to measure, or reduce).
  • Reserve.
  • In a large skillet, melt 2 tblsps butter over moderately-low heat and in it cook the garlic, stirring, until it is pale golden.
  • Discard garlic and add shrimp to the oil.
  • Cook over moderate heat, stirring, for 3 minutes, or until barely pink, but not cooked through.
  • Transfer shrimp to a bowl, add remaining 2 tblsps of butter to the skillet and cook onion, peppers, mushrooms and celery, stirring, for 5 minutes.
  • Add paprika and flour and cook over moderately-low heat, stirring, for 3 minutes.
  • Stir in tomato paste and reserved shrimp broth and bring to boil.
  • Add shrimp mixture and simmer, stirring occasionally, for 3 minutes, or until shrimp are cooked through.
  • Stir in sour cream and Tabasco.
  • Bring mixture to a simmer, stirring, and season with salt and pepper (may be made 1 day in advance and kept covered and chilled. Reheat in skillet over moderately-low heat, stirring, until heated through, but do not let boil.) Spoon Shrimp Creole in center and around edge of rice ring and garnish with parsley.

3 tablespoons bacon drippings
1 large onion, finely chopped
1 ½ cups uncooked long grain white rice
3 ¼ cups chicken broth, divided
1 (14.5 ounce) can diced tomatoes with juice
2 teaspoons fresh lemon juice
1 ½ teaspoons Worcestershire sauce
1 teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground cayenne pepper
¼ teaspoon ground black pepper
2 pounds medium shrimp - peeled and deveined
¼ cup chopped fresh parsley

Steps:

  • Place bacon in a large, heavy pot over medium-high heat, and cook until evenly brown. Remove, and set aside. Drain drippings, reserving 3 tablespoons in the pot.
  • Place onion in the pot with the bacon drippings, and cook 5 minutes over medium heat, stirring constantly, until tender. Mix in the rice, 2 1/4 cups broth, tomatoes with juice, lemon juice, and Worcestershire sauce. Season with salt, nutmeg, cayenne pepper, and black pepper. Bring to a boil, reduce heat to low, cover, and simmer 20 minutes.
  • Stir the cooked bacon, remaining 1 cup broth, and shrimp into the pot. Continue cooking 10 minutes, uncovered, over low heat. Sprinkle with parsley to serve.

1 tablespoon soy sauce
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cornstarch

4 ounces ham, diced
1 medium onion, diced
2 green onions, diced
2 eggs
1/2 cup peas
4 cups rice, cooked & cold
6 tablespoons vegetable oil

Steps:

  • Combine cornstarch and water. Mix with 1st four ingredients and marinate shrimp for 15 minutes.
  • Beat the eggs lightly with chopsticks and add a dash of salt and pepper.
  • Heat wok and add 1 tbsp oil. Pour 1/2 egg mixture into wok and cook over medium heat, turning once. Cook the other half the same way. Cut the egg into small strips and set aside.
  • Add 2 tbsp oil to wok and stir-fry the onion and shrimp on hight heat for a few moments. Remove and set aside.
  • Repeat for ham and green peas.
  • Add 2 tbsp oil, turn down heat to medium and stir-fry rice. Add a bit of oyster sauce and soy sauce, if desired.
  • Combine all the ingredients and stir-fry to blend.
