Take the muffins out of the oven and run a paring knife carefully around each muffin, then invert the pan, and knock one edge against your work surface to release the muffins. Serve the muffins right away.

Tips:
- Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes with a deep orange color. Avoid potatoes that are soft, have bruises, or are sprouting.
- Cook the sweet potatoes properly: To ensure your muffins are moist and flavorful, cook the sweet potatoes until they are tender but not mushy. You can bake them in the oven, microwave them, or boil them.
- Use a variety of spices: Sweet potato muffins are a great way to experiment with different spices. Some popular options include cinnamon, nutmeg, ginger, and allspice. You can also add a pinch of cayenne pepper for a little heat.
- Don't overmix the batter: Overmixing the batter can make your muffins tough. Mix the ingredients just until they are combined.
- Bake the muffins at the right temperature: The ideal temperature for baking sweet potato muffins is 350°F (175°C). This will help them rise properly and prevent them from becoming dry.
Conclusion:
Sweet potato muffins are a delicious and nutritious breakfast option that are easy to make. They are a great way to use up leftover sweet potatoes, and they can be customized to your own preferences. With a variety of recipes to choose from, you're sure to find one that you'll love.
