4 cups pearl onions
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
Dash pepper
3/4 cup chicken broth
3/4 cup half-and-half cream
1/4 cup minced fresh parsley
3 tablespoons grated Parmesan cheese
Pimiento strips, optional

Steps:

  • In a Dutch oven or large kettle, bring 8 cups water to a boil. Add pearl onions; boil until tender, 6-7 minutes. Drain and rinse in cold water; peel and set aside., In a saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually stir in broth and cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the parsley, cheese and onions., Pour into an ungreased 1-1/2-qt. baking dish. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 15 minutes; stir. Top with pimientos if desired. Bake, uncovered, 10 minutes longer or until bubbly and heated through.

3 tablespoons butter
3 tablespoons all-purpose flour
1 pinch ground nutmeg
1 ½ cups light cream
½ teaspoon salt
ground black pepper to taste
2 tablespoons chopped fresh parsley

Steps:

  • Place onions into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
  • Melt butter in a large skillet over medium heat; cook and stir flour and nutmeg in melted butter for about 5 minutes; season with salt and pepper. 1 tablespoon olive oil
¼ teaspoon kosher salt
6 tablespoons unsalted butter
6 tablespoons all-purpose flour
3 cups milk
¾ cup chopped fresh parsley, or more to taste
¼ cup dry sherry
¾ teaspoon paprika
⅛ teaspoon ground cloves
salt and freshly ground black pepper to taste
3 tablespoons panko bread crumbs, or to taste

Steps:

  • Partially thaw onions for 10 minutes, then thinly slice crosswise into rounds. Set in a colander and let thaw completely. Drain and spread on a paper towel-lined tray. Pat dry with paper towels.

I found this recipe on youtube......For times when you don't have meat drippings, this makes a nice, smooth gravy without all the "junk" added to jar gravy or gravy mixes. (I like to make the beef gravy, then heat meatballs in it, and add a little sour cream for a nice "comfort food" to serve over noodles.) "Better than Bouillon" can be found in your grocery near the soup bases or the chicken or beef broth.

2 1/2 tablespoons better than bouillon beef base or 2 1/2 tablespoons chicken base
1/3 cup cornstarch

  • Measure 4 cups of water into saucepan and heat at med-high to gentle boil.
  • While waiting for water in saucepan to boil, whisk together 1/4 cup water with 2 1/2 T Better Than Bouillon in a bowl until smooth. Whisk this mixture into the boiling water, stir while bringing to a gentle boil again. Reduce heat to low.
