BRAISED RED CABBAGE WITH APPLES

Braised Red Cabbage With Apples image

This is an adaptation of a classic cabbage dish that I never tire of. The cabbage cooks for a long time, until it is very tender and sweet. I like to serve this with bulgur, or as a side dish with just about anything. You can halve the quantities if you don't want to make such a large amount.

Categories     side-dish

Time 2h25m

Yield 6 servings

Number Of Ingredients 8

1 (3 pound) red cabbage
2 tablespoons vegetable oil
1 onion, chopped
3 medium-sized tart cooking apples, peeled, cored and cut into 1/8-inch-thick wedges
5 cups boiling water
2/3 cup red wine vinegar
2 teaspoons salt
2 tablespoons sugar

Steps:

  • Wash the head of cabbage under cold running water, remove the tough outer leaves, and cut cabbage into quarters. To shred the cabbage, cut out the core and slice the quarters crosswise into 1/8?inch-wide strips.
  • In a heavy 4 to 5-quart casserole, heat the oil over moderate heat. Add chopped onions and cook, stirring frequently for 5 minutes, or until the onions are lightly browned. Add the cabbage, stir thoroughly, add the apples, and pour in the boiling water. Bring to a boil over high heat, stirring occasionally, and reduce the heat to very low. Add red wine vinegar, salt and sugar, stir to combine. Cover and simmer for 1 1/2 to 2 hours, or until the cabbage is tender. Check from time to time to make sure that the cabbage is moist and tender. If it seems dry, add a tablespoon of boiling water. When the cabbage is done, there should be almost no liquid left in the casserole. Taste for seasoning, then transfer the entire contents of the casserole to a heated platter or bowl and serve.

BRAISED RED CABBAGE WITH APPLES- TRADITIONAL BRITISH DISH

Braised Red Cabbage With Apples- Traditional British Dish image

This is a recipe taken from a Delia Smith cookbook Once cooked, it will keep warm without coming to any harm, and it will also re-heat very successfully. And, yes, it does freeze well so, all in all, it's a real winner of a recipe. It's great because it can be made the day before and gently re-heated with no last-minute bother. It is a perfect accompaniment to venison, goose or pork (and if you have any left over it does wonders for bangers and mash).

Categories     Christmas     Dinner     Apple     Cabbage     Simmer     Boil

Yield makes 4 to 6 servings

Number Of Ingredients 7

4 tablespoons (1/2 stick) butter
2 tablespoons sugar
3 tablespoons red or white wine vinegar
Salt and black pepper to taste
1 medium head of red cabbage, about 2 pounds, cored and shredded
2 apples, preferably Cortland or Golden Delicious, peeled, cored, and cut into chunks
1/4 cup black or red currant jelly or red wine, optional

Steps:

  • Combine the butter, sugar, and vinegar with a large pinch of salt and a sprinkling of pepper in a large deep skillet with a lid over medium heat. Bring to a boil.
  • Add the cabbage, stirring to coat. When the cabbage begins to glisten and soften a bit, add the apple pieces and stir. Reduce the heat to medium-low and simmer, covered, until the cabbage is soft, about 45 minutes.
  • Stir in the currant jelly or wine if you're using it. Taste and adjust the seasoning, then serve.
  • Braised Cabbage with Chestnuts
  • Omit the sugar from step 1. In step 2, substitute green cabbage for red and 1 cup peeled and roughly chopped chestnuts (page 453) for the apples. Cook until both chestnuts and cabbage are tender, as directed, then serve.

Tips:

  • Use a large skillet or Dutch oven to braise the red cabbage. This will allow the cabbage to cook evenly and prevent it from overcrowding.
  • Slice the red cabbage thinly. This will help it cook more quickly and evenly.
  • Add a variety of spices and herbs to the braising liquid. This will give the cabbage a complex and flavorful taste.
  • Braising the cabbage for a longer period of time will result in a more tender and flavorful dish.
  • Serve the braised red cabbage with a variety of sides, such as roasted chicken, pork chops, or mashed potatoes.

Conclusion:

Braised red cabbage with apples is a delicious and versatile dish that can be enjoyed as a side dish or a main course. It is a great way to use up leftover red cabbage, and it is also a healthy and affordable meal. With its sweet and tangy flavor, this dish is sure to please everyone at the table.
