1 medium onion, finely chopped
1 small green bell pepper, chopped
2 tablespoons vegetable oil
1 cup uncooked regular long-grain white rice
2 1/2 cups water
1 teaspoon salt
3/4 teaspoon chili powder
1/8 teaspoon garlic powder
1 can (8 ounces) tomato sauce

Steps:

  • In 10-inch skillet, heat oil over medium heat 1 to 2 minutes. Cook onion and uncooked rice in the oil about 5 minutes, stirring frequently, until rice is golden brown.
  • Remove skillet from heat. Stir in bell pepper, water, salt, chili powder, garlic powder and tomato sauce. Heat to boiling over high heat, stirring occasionally. Reduce heat to low; cover and cook about 25 minutes, stirring occasionally, until rice is tender and tomato sauce is absorbed.

6 slices bacon, cut up
1/4 cup finely chopped onion
1/4 cup chopped green pepper
3 cups cooked rice (1 cup uncooked)
2 cups canned tomatoes
1 1/2 teaspoons salt
1/8 teaspoon pepper

Steps:

  • In a skillet, fry the bacon until it is crisp; remove from skillet and drain off most of the fat.
  • Add onion and green pepper to bacon fat and cook over medium heat until the onion is yellowed.
  • Add remaining ingredients and cook uncovered over low heat for abou 15 minutes, or until hot.
  • NOTE: you can heat the oven to 400 degrees and combine the cooked bacon, onion and pepper with the rice and tomatoes, salt and pepper, in a baking dish. Bake for 25-30 minutes.
  • ALSO, you can substitute jarred or packaged cooked bacon bits, genuine or soy-imitation.

1 cup rice, Regular, Uncooked
2/3 cup green bell pepper, Chopped
1 (16 ounce) can stewed tomatoes
5 slices bacon, Crisp, Crumbled
2 cups water
1 teaspoon chili powder
1/2 teaspoon oregano leaves
1 1/4 teaspoons salt
1/8 teaspoon pepper

Steps:

  • Cook and stir the meat and onion in a large skillet until the meat is brown.
  • Drain off the excess fat.
  • Stir in the remaining ingredients.
  • TO COOK IN A SKILLET: Heat the mixture to boiling then reduce the heat and simmer, covered, stirring occasionally, until the rice is tender, about 30 minutes. (A small amount of water can be added if necessary.)
