Tips:

  • For the best results, use a high-quality gluten-free flour blend. Betty Crocker's Gluten-Free Flour Blend is a good option.
  • If you don't have a potato ricer, you can grate the potatoes on the large holes of a box grater.
  • Be sure to squeeze as much liquid as possible out of the grated potatoes before adding them to the batter. This will help the cakes to be crispy.
  • Don't overmix the batter. Overmixing will make the cakes tough.
  • Cook the cakes over medium heat. If the heat is too high, the outsides of the cakes will brown before the insides are cooked through.
  • Serve the cakes hot with your favorite toppings. Sour cream, applesauce, and maple syrup are all great options.

Conclusion:

Betty Erlich's Potato Cake is a delicious and easy-to-make gluten-free recipe. With a few simple ingredients and a little bit of time, you can enjoy these crispy and flavorful cakes. Whether you're serving them for breakfast, lunch, or dinner, they're sure to be a hit.
