1/4 cup canola mayonnaise or light mayonnaise
1/4 cup minced shallots
2 tablespoons chopped fresh dill
1 small pickle, diced
Salt and freshly ground black pepper
2 whole wheat pitas
4 leaves romaine lettuce, washed and dried
2 cups plain 2-percent Greek yogurt
1 tablespoon chia seeds or sunflower seeds
16 medium strawberries

Steps:

  • For the egg salad: Place the eggs in a medium saucepan and cover with water. Bring to a boil and turn off the heat. Cover and leave the eggs in the hot water for 10 minutes. Remove the eggs from the water and place in an ice bath for 5 minutes, then peel the shells.
  • Dice the eggs and combine with the mayonnaise, shallots, dill and pickles in a bowl. Season the egg salad with salt and pepper. Set aside.

3 tablespoons fresh lemon juice
1 teaspoon grated lemon peel
1/2 cup vanilla-flavored protein powder
1 container (8 ounces) fat-free cholesterol-free egg product
Powdered sugar, if desired

Steps:

  • Heat oven to 350°F. Press Ready-Mixed Crust (dry) from lemon bar mix in bottom of square pan, 8x8x2 or 9x9x2 inches. Bake 10 minutes.
  • Add enough water to lemon juice to equal 1/2 cup. Place Filling Mix from lemon bar mix, lemon peel and protein powder in large bowl. Stir in egg product and lemon juice mixture with wire whisk until smooth. Pour filling over hot crust.

6 cups rolled oats
6 cups quinoa, cooked
4 teaspoons baking powder
1 teaspoon salt
1 cup maple syrup
½ cup refined coconut oil, melted
2 teaspoons vanilla extract
4 ripe bananas, mashed
6 tablespoons peanut butter
5 tablespoons mini chocolate chips
¾ cup gala apple, diced
6 tablespoons walnuts, chopped
1 ½ tablespoons cinnamon
¼ teaspoon nutmeg
¾ cup carrot, grated
3 teaspoons cinnamon

1 (10 1/2 ounce) package mini marshmallows
1/2 cup butter
1 cup peanut butter, divided
2 tablespoons peanut butter, divided
2 cups semi-sweet chocolate chips, divided
1 cup blanched peanuts
1 cup quick-cooking oats
2 cups Rice Krispies
1 cup butterscotch chips

Steps:

  • Place marshmallows, butter, 1 cup peanut butter and 1 cup chocolate chips in a 2 quart glass bowl.
  • Microwave on high for 2 to 2-1/2 minutes.
  • Stir until smooth.
  • Stir in the peanuts, oats, and Rice Krispies cereal until well coated.
  • Spread into a buttered 9x13 baking pan.
  • Scrape bowl clean.
