OLD-FASHIONED BEAN POT BAKED BEANS

This recipe is a good excuse to go antique shopping for an oven-proof, lidded bean crock. You can also use a lidded Dutch Oven. Fabulous beans--a real crowd pleaser.

Categories     Beans

Time 6h

Yield 8 serving(s)

Number Of Ingredients 12

1 lb dried navy beans
1/2 cup chopped onion, plus
1 small onion, whole, peeled
1/2 cup molasses
1 teaspoon dry mustard
1/4 cup brown sugar, packed
1/2 cup maple syrup
1 tablespoon ketchup
2 teaspoons prepared yellow mustard
1/2 cup orange juice
1 teaspoon salt
1/4 lb salt pork, slices

Steps:

  • Rinse beans and pick them over. Put beans in a large plastic container with three times as much water as beans. Cover and refrigerate overnight.
  • Drain beans. Combine beans and chopped onion in a large saucepan. Add water to cover them and heat to boiling. Cover and let simmer about 30 minutes. Drain liquid into a small bowl to reserve for sauce and for cooking.
  • Measure 1/2 cup of the bean liquid into a bowl. Add the orange juice, molasses, maple syrup, ketchup, and prepared mustard. Then add the brown sugar, stirring to dissolve. Lastly, add the dry mustard and salt and combine.
  • In a 2-quart bean crock or covered baking dish layer half the salt pork and all of the beans, making sure to bury the peeled, whole onion in the bottom. Pour the sauce mixture over beans and add just enough reserved bean liquid to cover them. Top with remaining salt pork.
  • Bake, covered, at 300 degrees for 4 hours, checking on the hour. If beans seem too dry, add a little of the remaining bean liquid. Uncover and then bake for one hour more.

BIG POT OF BEANS

Big Pot of Beans image

Chances are good you have some dried beans on hand, and that is a great thing. Especially since one basic recipe works for so many kinds, from red beans to white cannellini to black turtle beans. Choose whichever you like, but bear in mind: Sometimes, the best bean is the one already in your pantry.

Categories     beans

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 7

1 pound any dried beans
Salt
Olive oil, as needed
Aromatics, such as peeled garlic cloves, a halved onion or shallots, a celery stalk or a carrot
Dried or fresh herbs, such as thyme, sage, oregano or rosemary sprigs, or a bay leaf or two
A hunk of cured sausage, bacon, ham, smoked duck or pork or a Parmesan rind (optional)
Chopped fresh herbs or celery leaves, red-pepper flakes, sliced scallion or red onion, flaky sea salt, for serving (optional)

Steps:

  • Rinse the beans, then soak them in salted water (it should taste like the sea) for anywhere from 4 hours to 12 hours. If you don't have time, you can skip this step.
  • Drain beans and put them in a pot or electric pressure cooker. If cooking in a regular pot, add enough water to cover the beans by 2 to 3 inches. If using a pressure cooker, use less water, more like 1 1/2 to 2 inches. Add a drizzle of oil and whatever aromatics and herbs you like. Add enough salt to the cooking water to make it taste like the sea.
  • If using a regular pot, simmer the beans for anywhere to 30 minutes to 2 to 3 hours, depending on what variety you used, how old they were and whether or not you soaked them. Check on them periodically, adding more water if the level gets too low (as in, lower than the beans). For the pressure cooker, the timing is anywhere from 5 minutes at high pressure to 50 minutes. Let the pressure release naturally.
  • Garnish with fresh herbs or celery leaves, sliced onion, if you like, a drizzle of oil, and a sprinkle of red-pepper flakes and sea salt.

MY BIG FAT GREEK BAKED BEANS

My Big Fat Greek Baked Beans image

I used to believe the best baked beans came from Boston or Texas, but ever since I discovered this very hearty giant bean casserole, I have to give it to the Greeks. 'Big Fat' refers not only to size of the beans, but also to the huge flavor of this dish. Use the largest beans you can find: Gigante beans are the best, but Corona and lima beans also work great. Serve alongside grilled meat or simply with extra feta for a great vegetarian main.

Time 10h5m

Yield 10

Number Of Ingredients 17

1 pound dried Corona beans

3 cloves garlic, sliced
2 cups tomato sauce
2 tablespoons tomato paste
3 tablespoons honey
½ cup chopped fresh dill
½ cup extra-virgin olive oil

POT OF BEANS

Pot of Beans image

These pantry staples are versatile, healthful, and delicious. Count on them for simple, satisfying meals.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Time 2h10m

Yield Makes 6 cups

Number Of Ingredients 8

1 pound dried beans, such as kidney, cannellini, navy, pinto, or black
8 to 10 cups water, plus more for soaking
2 tablespoons extra-virgin olive oil
1 onion, chopped
3 garlic cloves, chopped
1 fresh chile, chopped
Coarse salt
Optional flavor add-ins (see below)

Steps:

  • Make the beans: Place beans in a large bowl; cover with water by several inches. Refrigerate, covered, overnight. Drain. (For a quick soak, cover beans in a saucepan with water. Bring to a boil. Remove from heat. Let stand, covered, for 1 hour. Drain.)
  • Make the flavor base: Heat oil in a pot over medium heat. Cook onion, garlic, chile, 1 1/2 teaspoons salt, and any add-ins until onion and garlic are soft, about 5 minutes.
  • Add beans, 8 cups water, and 1 1/2 teaspoons salt. Bring to a boil. Reduce heat. Simmer, partially covered, adding water as needed to keep submerged, until tender, 35 minutes to 2 hours, depending on type of bean. (Start checking for doneness after 30 minutes.)

Tips:

  • Soak Dried Beans Overnight: Soaking beans overnight helps to reduce cooking time and makes them more digestible. Cover the beans with water by 2 inches and let them soak for at least 8 hours, or overnight.
  • Use a Variety of Beans: Don't be afraid to mix and match different types of beans in your soup. This will add variety to the flavor and texture.
  • Add Aromatics: Aromatics such as garlic, onion, and celery add depth of flavor to the soup. Sauté them in some oil or butter until they are softened before adding the beans and other ingredients.
  • Don't Overcook the Beans: Beans should be cooked until they are tender but still hold their shape. Overcooked beans will become mushy and lose their flavor.
  • Add Vegetables: Vegetables such as carrots, celery, and potatoes add bulk and flavor to the soup. You can also add other vegetables such as zucchini, broccoli, or spinach.
  • Season to Taste: Season the soup with salt, pepper, and other herbs and spices to taste. You can also add a splash of lemon juice or vinegar for a bit of brightness.
  • Garnish Before Serving: Garnish the soup with fresh herbs such as parsley, cilantro, or thyme before serving. This adds a touch of color and freshness.

Conclusion:

Big bean pot recipes are a delicious and hearty way to enjoy beans. With a few simple ingredients and some time, you can create a flavorful and satisfying soup that the whole family will enjoy. So next time you're looking for a comforting and nutritious meal, give one of these big bean pot recipes a try. You won't be disappointed!
