2 cloves garlic, crushed
¼ cup tomato-based chili sauce
1 lemon, juiced

2 pounds peeled and deveined medium shrimp
16 skewers

Steps:

1 pound shrimp
20 wooden skewers, soaked in water 30 minutes
1/2 cup soy sauce, plus 2 tablespoons
1/4 cup sake
5 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 shallots, finely diced
2 cloves garlic, minced
1 (28-ounce) can whole, peeled tomatoes, drained and hand-crushed
1/4 cup hoisin sauce
2 tablespoons rice vinegar
1 tablespoon red chili paste (recommended: Srirachi Hot Chili Sauce)
1/4 cup brown sugar
1/2 teaspoon chili powder
2 avocados, peeled and sliced, for garnish
2 scallions, sliced thin, for garnish
Lime wedges, for garnish

Steps:

  • Thread shrimp onto skewers and place in a shallow dish. Pour 1/2 cup soy sauce, sake, and 2 tablespoons oil over the shrimp and season them with salt and pepper. Set aside and let them marinate while you make the barbecue sauce.
  • Heat 3 tablespoons oil in a large saute pan over medium-high heat. Add shallots and garlic and cook for 1 minute. Stir in tomatoes and season with salt and pepper. 1/2 cup olive oil
2 teaspoons finely minced garlic
4 whole bay leaves, finely crushed
2 teaspoons finely crushed dried rosemary leaves
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon coarse salt
Cayenne pepper, to taste
1 tablespoon paprika
1/2 teaspoon freshly ground black pepper
1 teaspoon freshly squeezed lemon juice
2 pounds large shrimp, in the shell and preferably with heads
Crusty baguette, for serving

Steps:

  • Preheat oven to 450 degrees. In a heavy-bottomed ovenproof saucepan, melt butter; add oil, stirring to combine. Add garlic, bay leaves, rosemary, basil, oregano, salt, cayenne pepper, paprika, black pepper, and lemon juice. Cook over medium heat, stirring constantly, until the sauce begins to boil. Reduce heat to low, and simmer, stirring frequently, 7 to 8 minutes. Remove from heat, and let stand at room temperature for at least 30 minutes.

6 cloves coarsely chopped fresh garlic

⅛ teaspoon seafood seasoning (such as Old Bay®)
1 tablespoon butter
2 cups chicken stock
lemon, juiced
2 tablespoons Worcestershire sauce, or more to taste
2 dashes hot sauce, or to taste
3 tablespoons cold butter, cut into chunks
6 cloves garlic, minced
1 tablespoon minced fresh rosemary
1 sprig fresh rosemary for garnish

  • Peel shrimp and place into a mixing bowl; set shrimp shells aside in a saucepan.
