BRINJAL (EGGPLANT) IN COCONUT MILK

Brinjal (Eggplant) in Coconut Milk image

I learned This dish from my mother and I am eternally grateful for everything she taught me..actually I am a brinjal hater before and I never wanted to taste this ever in my life. Years passed and after my marriage I wanted to try this for my darling and I made it as per my umma's instructions. It was a hit dish and everyone loved it in my family. When I tasted it, I really loved the flavor and taste and wanted to share it here. The main highlight of this dish is mainly sour taste of tamarind. If you are looking for quick south Indian meal ideas, this could be one of the choices.

Tips for Making the Perfect Bitter Melon and Brinjal Eggplant Relish:

- **Choose the right ingredients:** Select firm, tender bitter melons and brinjal eggplants. Look for eggplants with smooth, shiny skin and no blemishes. Avoid bitter melons that are too yellow or have soft spots. - **Prepare the vegetables properly:** Cut the bitter melons and brinjals into thin slices or cubes. Soaking the bitter melons in salt water for 30 minutes before cooking will help reduce their bitterness. - **Use a heavy-bottomed pan:** This will help distribute the heat evenly and prevent the vegetables from burning. - **Cook the vegetables over medium heat:** This will allow them to soften without overcooking. - **Add the spices and seasonings gradually:** Start with a small amount and adjust to taste. - **Don't overcook the relish:** The vegetables should be tender but still have a slight crunch. - **Serve the relish warm or at room temperature:** It can be enjoyed as a condiment, side dish, or spread.

Conclusion:

Bitter melon and brinjal eggplant relish is a delicious and versatile dish that can be enjoyed in many ways. With its unique flavor and health benefits, it's a great addition to any meal. So next time you're looking for a new and exciting recipe, give this relish a try. You won't be disappointed!
