2 tablespoons lemon juice

2 slices brioche bread (3/4-inch slices)
1 tablespoon black bean hummus, recipe follows
5 slices pickled jalapeno peppers, recipe follows
2 1/2 ounces gouda cheese (sliced or shredded)
1 1/2 teaspoons clarified butter
2 (15 ounce) cans black beans, drained and rinsed
1/2 cup lime juice
1/3 cup tahini paste
1 tablespoon ground cumin
2 garlic cloves, peeled
extra-virgin olive oil
salt & freshly ground black pepper
2 lbs jalapenos
5 cups apple cider vinegar
6 tablespoons kosher salt
6 tablespoons granulated sugar
4 tablespoons whole coriander seeds
4 tablespoons black peppercorns

Once the brine has boiled, reduce the heat and simmer for 5 minutes. Remove from the heat and pour over the sliced jalapenos. Let cool, and then refrigerate.
