Provided by ThinkAndDrive

Categories     Black Beans

Time 40m

Yield 8 serving(s)

Number Of Ingredients 13

5 tablespoons light olive oil
1 medium onion, chopped
5 garlic cloves, chopped fine
2 tablespoons chili powder
1 teaspoon cumin
1 tablespoon red pepper flakes
salt and black pepper
20 -25 medium shrimp
28 ounces black beans, drained and rinsed
20 ounces stewed tomatoes, chopped
4 cups vegetable broth
1/2 cup half-and-half
TABASCO® brand Chipotle Pepper Sauce

Steps:

  • Sweat the onions and half of the garlic in two tablespoons of the olive oil. Toss in the Cumin, Chile Powder, and Salt and Pepper. Cook for about three minutes on medium-high heat.
  • Peel, devein, and rinse the shrimp. Zest and juice the limes into a bowl and add the rest of the olive oil and garlic. Add the red pepper flakes to the bowl. Toss the shrimp in and allow to marinade.
  • Add the black beans to the onion mixture and mash about half of them. Add the tomatoes, Tobasco, veggie broth, and half and half. Stir until well mixed. Allow to come to a bubble and then lower the heat to simmer. Let the soup simmer for about 12 minutes.

BLACK BEAN SOUP WITH CILANTRO-LIME SOUR CREAM

Black Bean Soup with Cilantro-Lime Sour Cream image

Categories     Soup/Stew     Blender     Bean     Tomato     Super Bowl     Lunch     Lime     Bacon     Healthy     Sour Cream     Bon Appétit     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Serves 8

Number Of Ingredients 20

1 16-ounce package (about 2 1/2 cups) dried black beans
6 bacon slices, chopped
3/4 cup finely chopped celery
3/4 cup finely chopped onion
3/4 cup finely chopped carrots
3/4 cup finely chopped leeks
10 cups canned low-salt chicken broth
1 large tomato, chopped
1 cup (packed) chopped fresh cilantro
1/3 cup (packed) chopped fresh parsley
1 1/2 tablespoons minced garlic
1 jalapeño chili, minced
1 tablespoon red wine vinegar
2 teaspoons ground cumin
1 teaspoon ground coriander
3/4 cup sour cream
2 teaspoons fresh lemon juice
2 teaspoons fresh lime juice
Additional chopped fresh cilantro
Additional chopped tomato

Steps:

  • Place beans in large bowl. Add enough water to cover by 3 inches. Let stand overnight. Drain well.
  • Cook bacon in heavy large pot over medium heat until brown but still soft, about 4 minutes. Add celery, onion, carrots and leeks and sauté until vegetables begin to soften, about 10 minutes. Add beans, chicken broth, tomato, 1/2 cup cilantro, parsley, garlic, jalapeño, vinegar, cumin and coriander. Bring to boil. Reduce heat to medium-low, cover and simmer soup until beans are very tender, stirring occasionally, about 2 hours.
  • Working in batches, transfer soup to blender and process until slightly chunky puree forms. Return soup to pot. Season to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer before continuing.)
  • Mix sour cream, lemon juice, lime juice and 1/2 cup cilantro in small bowl. Season to taste with salt and pepper. Ladle soup into bowls. Place dollop of sour cream mixture atop soup. Garnish with additional chopped cilantro and chopped tomato.

Tips:

  • To save time, use canned black beans instead of dried beans. Just be sure to rinse and drain them well before using.
  • If you don't have fresh lime juice on hand, you can use bottled lime juice. Just be sure to use 100% lime juice, not a lime-flavored drink.
  • For a creamier soup, purée some of the soup in a blender or food processor before serving.
  • Garnish the soup with fresh cilantro, chopped onion, or avocado slices before serving.
  • Serve the soup with a side of cornbread, tortillas, or rice.

Conclusion:

Black bean soup is a delicious, healthy, and easy-to-make soup that is perfect for a quick and easy meal. It is also a great way to use up leftover black beans. With its smoky, slightly sweet flavor and the tangy lime juice, this soup is sure to be a hit with everyone at the table. So next time you're looking for a quick and easy soup recipe, give this black bean soup a try. You won't be disappointed!
