3/4 cup onion, chopped
1/4 cup margarine or 1/4 cup butter
2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1/2-1 teaspoon black pepper, coarsely ground
1/2 teaspoon salt
1/2 cup whipping cream
1 egg

Steps:

  • Heat oven to 400 degrees.
  • In a small skillet, saute onions in margarine until crisp tender; set aside. Cool slightly.
  • Lightly spoon flour into measuring cup and level off with a knife.
  • In a medium bowl, combine flour, sugar, baking powder, pepper and salt; blend well.
  • Add whipping cream, egg and sauteed onions; stir just until moistened.

1/3 cup fresh chives
1/2 cup grated cheddar
1/3 cup roasted, peeled, and diced small red bell pepper
1/3 cup roasted, peeled, and diced small yellow bell pepper
1 to 1 1/4 cups buttermilk
1 egg, beaten
