Categories     side-dish

Time 28m

Yield 1 pound cured pork belly

Number Of Ingredients 5

1 cup salt
3/4 cup sugar
2 ounces molasses
2 tablespoons coarse ground black pepper
1 pound pork belly

Steps:

  • In a small bowl, combine salt and sugar. Spread molasses evenly over pork belly, then coat with the pepper. Spread the salt and sugar mixture generously over the entire slab. Place into a re-sealable plastic bag and refrigerate for 3 days.
  • After three days have passed, remove the pork from the brine, rinse the belly, and pat dry with paper towels. Lay on a rack over a sheet pan and place in front of a fan for 1 hour to form a pellicle. Lay the pork in the protein box of a cold smoker and smoke for 4 to 6 hours. Chill the meat in the freezer for 1 hour to stiffen for easy slicing into strips of bacon. Slice what you need and keep the remainder in a freezer safe bag in the refrigerator or freezer.
  • Place the strips of bacon onto a sheet pan fitted with a rack and place into a cold oven. Turn the oven to 400 degrees and cook for about 12 to 15 minutes, depending on how crispy you like your bacon. Remove from rack and drain on paper towels. Enjoy.

Provided by Food Network

Yield 4 servings

Number Of Ingredients 17

4 double cut pork chops (ask your butcher)
4 cups Pork Brine, recipe follows
Salt and pepper
Salt and Pepper
2 tablespoons butter
2 Granny Smith apples, sliced thin
1/4 cup molasses
1/4 cup cider vinegar
4 ounces sugar
1/4 cup molasses
2 ounces kosher salt
2 quarts water
1/4 cinnamon stick
1/2 tablespoon coriander
1/2 tablespoon whole black pepper
2 garlic cloves, smashed
2 whole cloves

Steps:

  • Place the pork chops in a glass or ceramic baking dish that will hold them comfortably in a single layer. Pour the brine over the chops and place in the refrigerator for 8 hours or overnight. Remove the pork chops from the brine and season well with salt and pepper. Grill or roast until desired doneness, approximately 12 minutes for medium. Remove the chops from the oven and keep in a warm place while you prepare the apples. In a large saute pan, heat the butter over high heat. When it starts to brown add the apples and saute, tossing, for 1 to 2 minutes. Add the molasses, cook for 1 minute and add the cider vinegar and reduce by half. Place a pork chop on each plate and top with some apples and the cooking juices.
  • Combine all ingredients in a medium sized pot and bring to a boil. Remove from heat and let cool in the refrigerator. (Can store up to 1 month in the refrigerator.)

Tips:

  • To ensure the pork chops are cooked evenly throughout, use a meat thermometer to check the internal temperature. The pork chops are done when they reach an internal temperature of 145°F (63°C).
  • If you don't have molasses, you can substitute it with brown sugar or honey. Although the flavor won't be exactly the same, it will still be delicious.
  • To make sure the pork chops are juicy and flavorful, don't overcook them. Overcooked pork chops will be tough and dry.
  • If you want a thicker sauce, you can simmer it for a longer period of time. The sauce will reduce and thicken as it simmers.
  • Serve the pork chops with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
  • Conclusion:

Black pepper pork chops with molasses butter is a delicious and easy-to-make dish that is perfect for any occasion. The pork chops are juicy and flavorful, and the molasses butter adds a sweet and tangy flavor that is sure to please everyone. This dish is also very versatile and can be served with a variety of sides. So next time you're looking for a quick and easy meal, give black pepper pork chops with molasses butter a try.
