Time 25m

Yield 4

Number Of Ingredients 7

1 tablespoon olive oil
4 (6 ounce) skinless, boneless chicken breast halves
¼ cup fat-free reduced-sodium chicken broth
2 teaspoons minced fresh thyme
⅓ cup seedless blackberry fruit spread, no sugar added
1 tablespoon balsamic vinegar
½ teaspoon cornstarch, or as desired

Steps:

  • Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts until golden brown on both sides, 2 to 3 minutes per side. While the chicken breasts are cooking, whisk together the chicken broth, thyme, blackberry spread, and balsamic vinegar.
  • Once the chicken breasts have browned on both sides, pour in the blackberry sauce, and bring to a simmer. Reduce heat to medium-low, and simmer until the chicken breasts are no longer pink in the center, about 15 minutes. Turn the chicken breasts over halfway through cooking. Serve with the reduced blackberry sauce. For a thicker sauce, mix cornstarch with about 2 teaspoons of water, and stir into simmering sauce; let cook until thickened, about 1 minute.

Time 18m

Yield 6 serving(s)

Number Of Ingredients 8

1 teaspoon vegetable oil
cooking spray
1/2 cup chopped red onion
salt and pepper
1/2 teaspoon dried thyme
6 boneless skinless chicken breast halves
1/3 cup seedless blackberry preserves
2 tablespoons balsamic vinegar

Steps:

  • Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add onion and saute till translucent.
  • Sprinkle salt, pepper, and thyme over the top of the chicken. Add chicken to skillet and saute 6 minutes on each side or until done. Remove chicken from skillet and keep warm. Reduce heat to medium low. Add preserves, vinegar, and salt and pepper, stirring constantly until the preserves melt. Spoon the sauce over chicken to serve.

Tips:

  • Use fresh blackberries: Fresh blackberries will give your dish the best flavor. If you can't find fresh blackberries, you can use frozen blackberries, but be sure to thaw them before using.
  • Reduce the balsamic vinegar: Reducing the balsamic vinegar will concentrate its flavor and make it more syrupy. To reduce the balsamic vinegar, simmer it in a saucepan over low heat until it has reduced by half.
  • Don't overcook the chicken: Overcooked chicken is dry and tough. To prevent overcooking, cook the chicken until it is cooked through but still juicy. The internal temperature of the chicken should be 165 degrees Fahrenheit.
  • Serve the chicken immediately: Blackberry balsamic chicken is best served immediately after it is cooked. The chicken will start to dry out if it sits for too long.

Conclusion:

Blackberry balsamic chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and juicy, and the blackberry balsamic sauce is flavorful and tangy. This dish is sure to be a hit with your family and friends.
