Time 5m

Yield 1 serving(s)

Number Of Ingredients 10

3 cups baby spinach leaves
1/3 cup fresh blackberries
2 thin slices red onions, separated into rings
1 ounce feta cheese, crumbled
2 tablespoons slivered almonds
1/2 tablespoon olive oil
1/2 tablespoon whole grain Dijon mustard
1/2 tablespoon honey
2 teaspoons apple cider vinegar
1/2 teaspoon lemon juice

Steps:

  • Combine all dressing ingredients in a small bowl and whisk together with a fork.
  • Arrange spinach leaves on your plate. Top with remaining salad ingredients.

  • Note: To lessen the pungent strength of the red onions, run under hot water for about 30 seconds or so.

Tips:

  • Use fresh, ripe blackberries for the best flavor.
  • If you don't have balsamic vinegar, you can substitute another type of vinegar, such as apple cider vinegar or red wine vinegar.
  • Feel free to add other ingredients to the salad, such as crumbled goat cheese, chopped walnuts, or sliced almonds.
  • Serve the salad immediately after making it. This will prevent the spinach from wilting.

Conclusion:

Blackberry balsamic spinach salad is a refreshing, healthy, and delicious salad that is perfect for any occasion. It is easy to make and can be tailored to your own preferences. Whether you are looking for a light lunch or a side dish for dinner, this salad is sure to please.
