2 pounds ground beef
2 medium onions, chopped
2 cloves of garlic, minced
2 tablespoons olive oil
6 (8-ounce) cans tomato sauce
2 tablespoons chili powder
2 to 4 milk chocolate kisses (recommended: Hershey's)
2 (15-ounce) cans of kidney beans, undrained
Garnish with shredded cheddar cheese

Steps:

  • Cook first 3 ingredients in olive oil, in Dutch oven over medium heat. Stir until ground beef crumbles, then drain. Return mixture to Dutch oven and stir in the chili powder, tomato sauce, and chocolate kisses. Cook over low heat for 15 minutes. Add kidney beans and cook until throughly heated. 1/4 cup Sherry
1/4 cup Worchestershire Sauce
1/2 Beer
2 beef bouillon cubes
4 oz blue cheese crumbles
Chili Spice
2 tsp paprika
2 tsp dark chili powder
2 tsp black pepper
1.5 tsp oregano
1.5 tsp thyme
2 tsp coriander
1 tsp cayenne
1 tsp white pepper
2 tsp onion powder
2 tsp garlic powder
2 tsp granulated garlic
1/4 tsp cumin

Steps:

  • Brown Ground Beef and chili spice #1 in heavy bottom stock pot. Add Onion, bacon, and chili spice #2until bacon is crisp and onion is soft over medium heat for 5-8 minutes. Add Sherry, bouillon, worschestershire and beer cook for 5 minutes. Add tomatoes and chili spice #3 cook for 10-15 minutes to incorporate the flavors. Remove from heat, add cheese and serve.

4 Yukon gold potatoes, about 2 pounds
Peanut oil, for frying
Kosher salt
1 pound bleu cheese, finely crumbled
1 bunch chives, chopped

Steps:

  • Peel the potatoes and slice them into thin 1/8-inch slices using a mandolin or sharp knife. Rinse the slices in several changes of water until the water runs clear. Drain them and pat them dry.
  • Put about 3 inches of oil into a large deep pot; it should not come up more than half way. Bring the oil up to 325 degrees F over medium-high heat. Working in batches, carefully add the potato slices, a dozen at a time. Stir them to make sure they are not sticking together. Fry until they are a golden brown, about 3 to 4 minutes. Remove and drain them well on paper towels; season with salt. Repeat with the remaining potato slices.
  • Heat the oven to 450 degrees F. Place a layer of the chips onto a baking dish and sprinkle with some of the bleu cheese and chives. Place another layer of chips onto that and some more cheese and chives. Continue until you have used up all the chips and cheese. Put into the oven and bake until the cheese has melted, about 5 minutes. Garnish with more chives.

1 ½ cups all-purpose flour, divided
1 ⅓ cups beef broth
1 quart water
3 tablespoons chili powder
2 tablespoons finely grated carrot
1 tablespoon white vinegar
2 teaspoons dried minced onion
2 teaspoons salt
1 teaspoon granulated sugar
1 teaspoon paprika
¼ teaspoon garlic powder

Steps:

  • Place the beef in a large, deep skillet over medium heat, and cook until evenly brown. Transfer beef to a strainer over a saucepan, and allow grease to drain for about 5 minutes. Mix any drippings remaining in skillet into the saucepan. There should be about 1/2 cup drippings. Return beef to skillet.
  • Heat the beef drippings in the saucepan over medium heat, and gradually mix in 1/4 cup flour. Reduce heat to low, and continue cooking 10 minutes, stirring continuously, to form a golden brown roux. Pour in the beef broth, and remove from heat.
  • Pour the water into the skillet with the beef, and mix in remaining flour. Stir in the roux mixture, chili powder, carrot, vinegar, onion, salt, sugar, paprika, and garlic powder. Bring to a boil, reduce heat to medium-low, and continue cooking 15 minutes, until thickened. When it's done cooking, take the chili off the heat, cover it, and let it sit for 30 minutes before using it on burgers, etc. It should thicken to a tasty brown paste as it sits.
