BLT CATFISH SANDWICHES
A classic gets a rockin' new twist with lemon-grilled catfish and tangy chili sauce instead of mayo. I love to serve these sandwiches with sweet red pepper strips and grilled potato wedges. They're always a huge hit! -Mary Ann Dell, Phoenixville, Pennsylvania

CRUNCHY CATFISH SANDWICH
Steps:
- Preheat the oven to 350 degrees F.
- To make the Spicy Tartar Sauce: Mix all the sauce ingredients in a small bowl until well combined. Cover and refrigerate until ready to serve.
- In a deep 12-inch pan set over medium-high heat, add enough oil so it comes 1/3 of the way up the sides. Heat the oil to 375 degrees F.
- In a wide-mouth bowl, whisk the eggs with the hot sauce, seafood seasoning and a pinch of salt. In a small paper bag, mix together the cornmeal, flour, cornstarch, and salt and pepper, to taste. Dredge the catfish in egg mixture, then in the flour mixture. Gently shake off excess flour. Set aside and repeat with remaining flounder. Fry the fish in batches until golden, about 2 to 3 minutes each side, being careful to keep the temperature at 375 degrees F. Remove catfish to a paper towel to drain and immediately season with salt.
- Slice the sandwich rolls in half, slather the cut sides with butter and season with salt. Arrange, cut side up, on a baking sheet and toast in the oven until lightly golden, about 8 minutes. An alternate is to put them, buttered side down, on a griddle or under a broiler, and toast until golden. Set aside.
- To assemble sandwiches, slather the rolls with the Spicy Tartar Sauce, top with lettuce and catfish, and serve.
BLT
The basic classic: bacon, lettuce, and tomato -- nothing fancy, just delicious. (I personally use fake vegetarian bacon these days, and it's still really good!)

CLASSIC BLT SANDWICH
This is a sandwich that I crave a lot. I am just posting it because I couldn't find it posted already on the Zaar...I couldn't believe that! My ex-DH wondered how I make these, so I decided to post it and send him the recipe. Nothing fancy -- just the real, simple, unabridged version. UPDATE: After reading Peg629's review, I have tried it that way, with one slice of toast spread with yellow mustard, and I must say it really, really makes an exceptional BLT! Such a subtle difference, yet genuinely makes a superior BLT, in my opinion! (Thank you Peg629 for that awesome suggestion!)

- Enjoy!
- NOTE: I also like to butter the toast slices before adding the mayo -- higher in fat, but tastier, in my opinion!
BLT FISH SANDWICHES
Adapted from a recipe in Redbook. The original recipe used Artic Char -- which I am not able to buy where I live -- subbed catfish and thick bread (challah, toasted) -- buns worked fine for us.

Steps:
- Heat a grill pan over medium heat and cook bacon (I use thick peppered bacon which takes longer to cook -- about 10-20 minutes). Drain on paper towels.
- Drain excess grease from pan and after salt and peppering fish cook fish in same pan (5-10 minutes per side depending on thickness of fish).
- In a small bowl mix together dressing (mayo - salt and pepper).
- Toast buns and spread mayo mixure on bottom of bun, add lettuce tomato slice, bacon and 1 piece fish top with lettuce and tomato and top bun (spead with mayo mixture) mayo side down.
- Repeat for rest of the sandwiches.
Tips:
- Choose firm, fresh catfish fillets. Look for fillets that are opaque and have a mild, sweet smell. Avoid fillets that are slimy or have a strong fishy odor.
- Soak the catfish fillets in milk for 30 minutes before cooking. This will help to remove any fishy flavor and make the fillets more tender.
- Season the catfish fillets with your favorite seasonings. Some good options include salt, pepper, garlic powder, and onion powder.
- Cook the catfish fillets until they are cooked through. The fish should be opaque and flake easily with a fork.
- Serve the catfish fillets on toasted buns with your favorite toppings. Some good options include lettuce, tomato, bacon, and tartar sauce.
Conclusion:
BLT catfish sandwiches are a delicious and easy-to-make meal that is perfect for any occasion. The catfish fillets are tender and flaky, and the bacon, lettuce, and tomato add a delicious crunch and flavor. Whether you are serving them for lunch or dinner, these sandwiches are sure to be a hit.
