BLUE CHEESE ASPARAGUS ROLLUPS

Blue Cheese Asparagus Rollups image

These are lovely appetizers to serve and so easy to make and not too expensive ingredients. You may freeze them before baking just allow a little longer in the oven when baking from the frozen state. I have just made these again using square white sandwich bread. I needed 25 slices of bread, put a generous tbsp of the filling on each, cut them in two and ended up with 50 appies. If using the sandwich bread you will need few extra asparagus but most aaparagus are longer than the slice of bread so you get 1 1/2 from most spears

ASPARAGUS ROLLUPS

Asparagus Rollups image

A do-ahead appetizer. You can 'wow' them with this one. I found this at Southern Living and this is the recipe as written. I like to use about half of the amount of blue cheese called for and I just use a 'swipe' on the bread.. not 2 tablespoons full.

Time 35m

Yield 12 appetizers, 12 serving(s)

Number Of Ingredients 11

24 fresh asparagus spears

Tips:

  • To ensure even cooking, cut the asparagus spears into uniform sizes.
  • To prevent the asparagus from becoming soggy, blanch them briefly in boiling water before wrapping them in prosciutto.
  • If you don't have a meat mallet, you can use a rolling pin to flatten the prosciutto slices.
  • To keep the roll-ups from unraveling, secure them with a toothpick or skewer before baking.
