1 (3 pound) whole beef tenderloin
½ cup teriyaki sauce
½ cup red wine
2 cloves garlic, chopped
4 ounces blue cheese, crumbled
⅓ cup mayonnaise
⅔ cup sour cream
1 ½ teaspoons Worcestershire sauce

Steps:

  • Place beef in a shallow dish. Combine teriyaki sauce, red wine and garlic; pour over beef. Allow beef to marinate in refrigerator for 30 minutes.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Place tenderloin on broiler pan, and cook in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C), and cook for 30 to 40 more minutes, or to desired doneness. Allow to set for 10 minutes before slicing.
  • In a saucepan over low heat, combine blue cheese, mayonnaise, sour cream and Worcestershire sauce. Stir until smooth; serve over sliced tenderloin.

1 (28 ounce) package frozen French fries (such as Ore Ida®)
3 slices bacon, sliced into 1/4-inch pieces
1 tablespoon butter
¼ cup minced scallions
1 tablespoon minced garlic
½ cup blue cheese crumbles
2 tablespoons half-and-half

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Spread French fries in a single layer on a baking sheet.
  • Bake in the preheated oven until lightly golden and crisp, 24 to 34 minutes.
  • Place bacon in a large skillet and cook over medium-high heat; cook and stir until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving some of the bacon grease in the skillet. Slice into 1/4-inch strips.
  • Stir butter into the bacon grease and set skillet over medium heat; add scallions and garlic. Cook and stir until scallions are soft and browning, about 5 minutes. 1 (3 rib) roast, about 5 pounds, rimmed of excess but not all fat
2 cloves garlic, finely sliced
Salt and freshly ground pepper
1/2 cup white wine
2 cups beef stock
4 russet potatoes, peeled
1 quart vegetable oil
Salt
3 tablespoons unsalted butter
3 tablespoons flour
3 cups hot milk
1 1/2 cups cabrales blue cheese, crumbled
Dash cayenne pepper
Salt
2 zucchini, cut on bias into 1/2-inch thick slices
1 yellow squash, cut on bias into 1/2-inch thick slices
2 red peppers, seeded, stemmed, and cut into 4 pieces
2 yellow peppers, seeded, stemmed, and cut into 4 pieces
1/4 cup olive oil

Steps:

  • Roast: Preheat oven to 450 degrees. Bring meat to room temperature by removing it from the refrigerator at least 1 hour before roasting. Using a paring knife, poke small holes in the meat and insert the garlic into them. Season the meat with salt and pepper to taste. Place the roast in a large roasting pan, bone side down. Roast for 15 minutes. Turn the heat down to 350 degrees and continue to roast for 1 hour to 1 hour and 15 minutes for medium-rare doneness. Remove meat to a carving board and let rest. Place roasting pan on top of stove over high heat. Add the wine and cook, stirring and scraping up any brown bits and reduce. Add stock and reduce by half, season with salt and pepper. Slice beef and drizzle with some of the sauce.
  • Potatoes: Slice the potatoes and cut them into 1/8-inch slices. Then cut the slices into long strips 1/8-inch wide. Heat oil to 375 degrees F. Add them in batches, separating them when they hit the oil. Fry until golden brown, remove and drain on paper towels and salt liberally.
  • Dip: Heat butter in medium saucepan over medium heat until melted. Whisk in flour and cook for 2-3 minutes. Whisk in the hot milk and cook until the sauce has thickened. Stir in the blue cheese and cook until the cheese has melted. Season with cayenne and salt. Pour into ramekins and serve with the fries.
  • Toss vegetables with olive oil. Season with salt and pepper. Grill until tender.

  • Place meat on broiler pan. 1 lb potatoes, peeled, cut into sticks
1 tablespoon canola oil
Dash salt
1/2 lb lean (at least 80%) ground beef
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Worcestershire sauce
1/2 cup shredded Cheddar cheese (2 oz)
1 cup loosely packed shredded lettuce
6 grape tomatoes, quartered
1/4 cup diced red onion
Ketchup
Mustard

Steps:

  • Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
  • Place potatoes in bowl of cold water; let stand about 5 minutes to rinse some of the starch off. Drain; dry potatoes well with paper towels. Wipe bowl dry with paper towels. Return potatoes to bowl; toss with canola oil and dash salt. Spread potatoes on cookie sheet in even layer.
  • Bake about 35 minutes or until potatoes are tender and golden brown on bottom. Remove from oven.

With slotted spoon, remove beef from skillet to paper towel-lined plate, leaving drippings in skillet.
  • Once potatoes are baked, set oven control to broil. In large cast iron or ovenproof skillet, layer half each of the potatoes, beef and cheese. Repeat with remaining potatoes, beef and cheese.
  • Place skillet under preheated broiler; broil 4 to 5 minutes or until cheese is melted and bubbly. Remove from broiler. Top with lettuce, tomatoes and onion. Serve with ketchup and mustard.
