HEAVENLY MEATLOAF WITH BLUE CHEESE, MUSHROOMS, AND SPINACH

Heavenly Meatloaf with Blue Cheese, Mushrooms, and Spinach image

A slightly different recipe using a combination of ingredients, this meatloaf tastes absolutely divine! Instead of the usual ketchup, tomato paste, and brown sugar, this meatloaf is more of an 'upscale' version of the traditional. Best served with mashed potatoes and asparagus. This is my own personal creation! I substitute ground deer meat occasionally instead of beef, only because I have a freezer full, and it's organic!

BLUE CHEESE MEATLOAF

Blue Cheese Meatloaf image

My family loves blue cheese - my husband will even eat it right from the container! One night, I was looking for a new way to use ground beef and this is what I came up with. It's now our favorite winter comfort food. We like to serve it with Parmesan Cous Cous.

Provided by Kim Barber

Categories     Meat

Time 1h10m

Yield 4-5 serving(s)

Number Of Ingredients 8

1 cup breadcrumbs
1/4 cup crumbled blue cheese
1 lb ground beef
1 egg (slightly beaten)
2 tablespoons chopped onions
1/2 teaspoon salt
1 dash pepper
blue cheese dressing

Steps:

  • Combine 1 cup bread crumbs and 1/4 cup crumbled blue cheese.
  • Add ground beef, egg, onion, salt and pepper.
  • Blend thoroughly.
  • Shape into a round loaf.
  • With a spoon, make a crater-like depression in top of loaf.
  • Fill depression with Blue Cheese Dressing.
  • If desired, sprinkle more crumbled blue cheese on top.
  • Bake at 350 for 1 hour.

Tips:

  • Use a variety of meats. Ground beef is the traditional choice for meatloaf, but you can also use ground turkey, chicken, pork, or lamb. You can also combine different types of meat to create a more flavorful loaf.
  • Add vegetables to the mix. Vegetables add moisture, flavor, and nutrients to meatloaf. Some good choices include chopped onions, carrots, celery, mushrooms, and spinach.
  • Use a binder. A binder helps to hold the meatloaf together. Some common binders include bread crumbs, crackers, oatmeal, and eggs.
  • Season the meatloaf well. Use a variety of spices and herbs to flavor the meatloaf. Some good choices include garlic, onion powder, paprika, chili powder, and cumin.
  • Bake the meatloaf at a moderate temperature. This will help to prevent the meatloaf from drying out. The ideal temperature is 350 degrees Fahrenheit.
  • Let the meatloaf rest before slicing. This will help to keep the meatloaf from falling apart.

Conclusion:

Meatloaf is a classic comfort food that can be enjoyed by people of all ages. It is a versatile dish that can be made with a variety of ingredients, making it a great option for busy weeknights or special occasions. With a little planning and preparation, you can create a delicious and satisfying meatloaf that your family and friends will love.
