Provided by Betsy Carter

Categories     Dinner

Yield 2 servings

Number Of Ingredients 18

1 cup unsalted butter, room temperature
1 cup crumbled blue cheese
2 tablespoons chives, finely chopped
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ medium yellow onion, thinly sliced
2 cups buttermilk
2 cups all-purpose flour
1 teaspoon paprika
1 teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper
4 cups canola oil, for frying
2 rib eye steaks, 1 1/2 in (3 cm)
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
2 teaspoons olive oil
2 tablespoons unsalted butter
5 sprigs fresh thyme

Steps:

  • Make the compound butter: In a medium bowl, mix together the butter, blue cheese, chives, salt, and pepper until well combined.
  • Transfer the butter to a piece of plastic wrap and roll into a log. Refrigerate for at least 1 hour, or until ready to use.
  • Make the fried onions: In a shallow bowl, combine the onions and buttermilk and let sit at room temperature for 1 hour.
  • In a medium bowl, whisk together the flour, paprika, salt, and pepper. Dip the buttermilk-coated onions into the flour mixture, shaking off any excess.
  • Fill a large skillet with high sides with the canola oil. Heat the oil over medium-high heat until it reaches 375˚F (190˚C). Once the oil is hot, add the onions in batches and fry for 3 minutes, until golden brown. Transfer the onions to a wire rack to drain and season with salt.
  • Generously season the steaks all over with salt and pepper.
  • Add the olive oil to a large cast-iron or stainless-steel pan over high heat. Once the oil begins to shimmer, add the steaks and cook, without disturbing, until a brown crust forms, about 7 minutes. Flip the steaks and continue to cook for 7 minutes more, until the steak is browned on both sides. Sear the sides of the steak to render any fat. Add the butter and thyme to the pan. Tilt the pan toward you and baste the steaks with the melted butter for 2 minutes, until the internal temperature reaches 135°F (60°C) for medium rare.
  • Serve the steak with the crispy onions and blue cheese compound butter.
  • Enjoy!

STEAK WITH BLUE CHEESE SAUCE

Steak With Blue Cheese Sauce image

Very assertively-flavored steak recipe that I learned about 12 years ago when I was learning to cook to impress my now-husband. Adapted from Betty Crocker's New International Cookbook. This Spanish-influenced recipe can tend to be somewhat on the salty side, so be careful to use unsalted butter to saute the steaks, and a good-quality, not-overly-salty blue cheese in the sauce. Serve simply, with a lightly-dressed salad, good crusty bread, and a nice red wine.

Provided by Lizzie-Babette

Categories     Steak

8 ounces good blue cheese, crumbled
1 -3 garlic clove, chopped

  • Stir frequently until cheese melts.
  • Remove from heat and keep warm.

STILTON (BLUE CHEESE) STEAK SAUCE

Stilton (Blue Cheese) Steak Sauce image

This is a very strong Blue cheese sauce that goes very well on Aged Angus Rib Eye steaks that have been crusted with pepper before being grilled. It is not for the faint of heart, or people who like mild (subtle) flavors.

Provided by Bob_Sisson

Categories     Sauces

Time 7m

Yield 4-6 serving(s)

Number Of Ingredients 4

1 1/2 cups Stilton cheese (Or Mountain Gorgonzola, needs to be a STRONG hard blue cheese)
1/4 cup Hellmann's mayonnaise
salt (optional)
1 teaspoon fresh ground pepper

Steps:

  • Shave or crumble about 1- 1 1/2 CUPS of the Blue cheese into a small heavy sauce pan.
  • Add about 1/4 cup Hellman's full fat mayonnaise. (This is the emumiant that keeps everything together).
  • I add a LOT (a full teaspoon) of pepper, I grind it right into the pan. Fresh really makes a difference.
  • Add salt to taste (I don't use any if I use the rind of the cheese as it is often hardened with salt).
  • Warm the pan slowly while constantly stirring. It will melt, don't give up.
  • If you heat it too fast, or don't still it will separate.
  • The mayo will forgive some sins, but not many, so stir!
  • This will make a THICK sauce.
  • More mayo will thin it some.
  • Milk can thin it if it is too strong.

Continue to grill until an instant-read thermometer registers 140 degrees F for medium, about 8 to 10 minutes. Transfer to a cutting board to rest for 15 minutes.
  • Meanwhile, mash the blue cheese in a bowl with the mayonnaise or sour cream, lemon zest, and pepper, to taste. Set aside.
  • Cut the rolls in half horizontally and brush the insides with olive oil. Grill until warm on each side, about 1 minute. Rub the toasted bread with the remaining clove of garlic.
  • Thinly slice the meat across the grain and assemble the sandwiches. Spread a few tablespoons of the blue cheese sauce on each sandwich, top with some of the steak, onions, roasted tomatoes and watercress. Serve warm or at room temperature.
  • Preheat the oven to 425 degrees F.
  • Toss the tomatoes in a large bowl with the olive oil, thyme, garlic, salt and pepper. Transfer to a baking sheet cut side up and roast until soft and juicy, about 20 minutes. Serve.

Yield 4

Number Of Ingredients 15

sea salt, or to taste, divided
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garlic powder
1 ¼ pounds flat iron steak
¾ teaspoon freshly ground black pepper, or to taste, divided
2 tablespoons extra-virgin olive oil, divided
2 cloves garlic cloves
2 russet potatoes, cut into 1/8-inch-thick slices
1 bunch broccolini, or more to taste
sea salt and ground black pepper to taste
¾ cup sour cream
3 ounces crumbled creamy blue cheese
½ teaspoon Worcestershire sauce
1 lemon, halved

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Mix 1 teaspoon salt, cumin, coriander, and garlic powder together in a small bowl. Sprinkle seasoning over steak. Add 1/4 teaspoon pepper.
  • Pour 1 tablespoon oil into a large bowl; grate garlic into the bowl. Add potatoes, 1 teaspoon salt, and 1/2 teaspoon pepper. Toss well to combine.
  • Place broccolini on a platter. Drizzle 1 tablespoon oil on top. Season with salt and pepper.
  • Lay steak on the hottest surface of the grill. Spread potatoes into 1 flat layer next to the steak, leaving some room for the broccolini. Close grill and cook for 5 minutes.
  • Whisk sour cream, blue cheese, and Worcestershire sauce together in a bowl. Season sauce with salt and pepper.
  • Flip steak and potatoes over with tongs. Spread broccolini and lemon onto the grill; cook until broccolini is lightly browned, about 2 minutes. Flip. Close grill and cook until steak begins to firm and is hot and slightly pink in the center, about 3 minutes more. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
  • Remove steak and let rest, covered, on a flat work surface, about 5 minutes. Transfer broccolini and potatoes to a separate platter. Slice steak. Divide slices between 4 plates; arrange broccolini, potatoes, and blue cheese sauce on the side. Squeeze grilled lemon halves on top.

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 10

1/2 cup cream cheese
1/2 cup heavy cream
1/4 cup sour cream
1 cup Gorgonzola, crumbled
1/4 cup chopped scallions
2 12-ounce rib-eye steaks, preferably grass-fed
2 tablespoons extra-virgin olive oil
Sea salt
Freshly ground black pepper
2 ounces arugula, about 3 cups

Steps:

  • For the blue cheese dressing, combine the heavy cream, cream cheese, sour cream, Gorgonzola, and scallions in a large bowl and gently crush together with a fork. Set aside.
  • Preheat a charcoal grill until the coals are white. Rub both sides of the steak with 1 tablespoon (15ml) olive oil and season liberally with salt and pepper. Put the steak in the center of the grill and cook 6 to 7 minutes per side, turn 90-degrees once on each side. If the grill is too hot and the steak is cooking too fast, transfer the steak to indirect heat and cover. Remove the steaks from the grill and rest for about 10 minutes. Meanwhile, toss the arugula with the remaining olive oil and season with salt.
  • Serve the steaks with the arugula and the blue cheese dressing.

Tips:

  • Choose the right steak: Ribeye, New York strip, and top sirloin are all excellent choices for blue cheese steak.
  • Use a good quality blue cheese: Look for a cheese that is creamy and flavorful, with a strong blue vein. Avoid cheeses that are crumbly or dry.
  • Cook the steak to your desired doneness: Blue cheese steak is traditionally served rare or medium-rare, but you can cook it to your liking.
  • Let the steak rest before slicing: This will allow the juices to redistribute throughout the steak, resulting in a more tender and flavorful bite.
  • Serve the steak with your favorite toppings: Popular options include blue cheese crumbles, caramelized onions, and sautéed mushrooms.

Conclusion:

Blue cheese steak is a delicious and easy-to-make dish that is perfect for a special occasion or a casual weeknight meal. With its juicy steak, creamy blue cheese, and flavorful toppings, blue cheese steak is sure to please everyone at the table. So next time you're looking for a new and exciting way to cook steak, give blue cheese steak a try.
