BANANA PANCAKES WITH BLISTERED BERRIES

Banana Pancakes with Blistered Berries image

Provided by Tia Mowry

Time 30m

Yield 10 pancakes

Number Of Ingredients 13

1 cup old-fashioned rolled oats
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon fine salt
1/4 teaspoon freshly ground nutmeg
2 ripe bananas
3 large eggs, lightly beaten
2 teaspoons honey
1 teaspoon vanilla extract
2 tablespoons unsalted butter
1 cup blueberries
1/2 cup toasted coconut flakes, optional
Maple syrup, for serving

Steps:

  • Preheat the oven to 200 degrees F.
  • Add the oats to a food processor and process until they resemble coarse flour. Add the baking soda, cinnamon, salt and nutmeg. Pulse a few more time to mix together.
  • Mash the bananas in a large bowl until smooth. Add in the eggs and mix well, then add the honey and vanilla and stir. Add the dry mixture to the wet and fold with a rubber spatula until a batter forms.
  • Put a griddle on medium heat and grease with some of the butter. Drop 1/4 cup of the batter per pancake onto the griddle. Cook the pancakes on each side until golden brown, 2 to 3 minutes per side. Transfer to the warm oven and continue with the remaining batter, adding more butter when needed.
  • To make the berries, set a dry saute pan over high heat. Add the blueberries and swirl the pan to avoid sticking. Heat until the berries are just starting to change to a deep purple color and beginning to blister and open.
  • Pour the berries over the pancakes and sprinkle with the coconut if using. Drizzle with the syrup. Serve immediately.

BLUE HEAVEN BANANA PANCAKES

Blue Heaven Banana Pancakes image

This is my version of the banana pancakes from Blue Heaven in Key West, FL. I've eaten there so many times and miss their delicious pancakes. It's not their exact recipe, obviously, but I think I got the flavor and texture almost exactly right!

Categories     Breakfast

Time 30m

Yield 8 4-5, 2-3 serving(s)

Number Of Ingredients 18

3/4 cup whole milk
1 egg, beaten
2 medium very ripe bananas
2 tablespoons oil or 2 tablespoons melted butter
1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon light brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 teaspoons vanilla
1/8 teaspoon nutmeg
chopped walnuts (I like to toast them first) (optional) or pecans (I like to toast them first) (optional)
1 cup maple syrup or 1 cup cane syrup, heated
1/2 teaspoon cinnamon
1 dash nutmeg
1 teaspoon brown sugar
1 tablespoon unsalted butter, melted

Steps:

  • Beat egg until fluffy. Add milk and oil/melted butter. Add vanilla.
  • In another bowl, combine all dry ingredients.
  • Take bananas out of skin and cut into very small pieces (1/2"). They do not have to be perfect, and do not worry about then getting a bit "mashed".
  • Add dry ingredients gradually to egg mixture.
  • Add cut bananas (and toasted nuts, optional).
  • In a non-stick 8-10" skillet, heat pan to medium. Pan is ready when water dances on surface.
  • Pour batter in pan using ladle or pitcher, forming a pancake approx 4-5" wide.
  • When the edges start looking a little "matte" and the pancake is bubbly, flip. When you see steam start "wisping" from the edges of the pancake, it is done.
  • Top with syrup (mix ingredients above and heat in microwave for 30-45 seconds), whipped cream, or more bananas and nuts.

Hearty, healthy buckwheat pancakes to start your day off right. Serve with only the finest dark maple syrup.

Provided by Robert Riggs

Time 30m

Yield 6

Number Of Ingredients 12

2 cups buckwheat flour
3 tablespoons brown sugar
3 tablespoons baking powder
¼ teaspoon salt
2 teaspoons ground cinnamon
1 ½ cups whole milk
1 large egg
2 tablespoons unsalted butter, melted
1 tablespoon pure vanilla extract
3 medium bananas, sliced
1 teaspoon vegetable oil, or as needed
1 cup chopped walnuts

Steps:

  • Mix flour, brown sugar, baking powder, salt, and cinnamon in a large mixing bowl until well combined. Clear a hole out in the middle and pour in milk, egg, melted butter, and vanilla. Stir until well combined but do not overmix. Stir banana slices into the pancake mix; set aside for 5 minutes.
  • Lightly oil a griddle with vegetable oil and heat to 325 to 350 degrees F (165 to 175 degrees C). Drop batter by large spoonfuls onto the griddle; cook until bubbles form and the edges are dry, 3 to 4 minutes. Drop some chopped walnuts on top.
  • Flip the pancakes over and if you added walnuts, lightly press down with a spatula to drive the nuts in. Cook until browned, 3 to 4 minutes, then flip back over to the original side for just 1 minute. Continue with remaining batter.

Tips:

  • Make sure your bananas are ripe, as this will give your pancakes a sweeter flavor and a more tender texture.
  • Don't overmix the batter. Overmixing can make your pancakes tough.
  • Let the batter rest for a few minutes before cooking. This will help the pancakes to rise properly.
  • Cook the pancakes over medium heat. If the heat is too high, the pancakes will burn on the outside before they are cooked through in the middle.
  • Serve the pancakes immediately with your favorite toppings, such as butter, syrup, fruit, or whipped cream.

Conclusion:

Blue Heaven banana pancakes are a delicious and easy-to-make breakfast or brunch dish. With just a few simple ingredients, you can create a stack of pancakes that are fluffy, flavorful, and sure to please everyone at the table. So next time you're looking for a special breakfast treat, give Blue Heaven banana pancakes a try.
