2 large eggs, room temperature
1 teaspoon grated lemon zest
2-1/4 cups all-purpose flour, divided
3 teaspoons baking powder
1 teaspoon salt
3/4 cup whole milk
1/4 cup water
2 cups fresh or frozen blueberries
1 package (8 ounces) cream cheese, diced
TOPPING:
1/4 cup all-purpose flour
1/4 cup sugar
1 teaspoon grated lemon zest
2 tablespoons cold butter

Steps:

  • In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in lemon zest. Combine 2 cups flour, baking powder and salt; add to the creamed mixture alternately with milk and water. In a bowl, toss blueberries with remaining flour; fold into batter along with cream cheese. ¾ cup white sugar

1 1/4 cups sugar
1/2 cup butter
2 eggs, beaten
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
3/4 cup 2% low-fat milk
1/4 cup water
1 teaspoon vanilla
2 cups fresh blueberries
1/4 cup flour
1 (8 ounce) package cream cheese
1 teaspoon lemon zest
1/4 cup flour
1/4 cup sugar
1/2 teaspoon lemon zest
2 tablespoons butter

Steps:

  • Preheat oven to 375.
  • Rinse blueberries in cool water to slightly thaw. Gently coat in 1/4 cup flour.
