¼ cup brown sugar
¼ cup white sugar
2 tablespoons whole wheat flour
1 lemon, juiced and zested
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with butter.
  • Beat 2 cups whole wheat flour, rolled oats, butter, 1/2 cup brown sugar, 1/2 cup white sugar, 1 teaspoon cinnamon, and 1/4 teaspoon kosher salt in a bowl with an electric mixer on medium speed until the mixture is pea-size and crumbly, 3 to 5 minutes. Refrigerate until ready to use.

5 cups berries
5 cups water
2 cups sugar

Steps:

  • Add all ingredient to a large sauce pan and stir to combine. Bring to a boil over high heat.
  • Once the mixture comes to a boil, continue to boil and stir for 5 minutes. Stir continuously and do not leave the mixture unattended.
  • Next, turn off the heat, but leave the sauce pan on the burner. Allow the mixture to steep and cool for 1 hour.
  • After the hour has passed, pour the mixture through cheesecloth to drain and to remove all of the berry seeds and/or pulp.
  • Transfer to a sterile bottle or jar. Keep refrigerated.
  • To use, pour approximately 1/4 cup of the syrup into a large drinking glass. Add ice and pour in 1 1/2 cups of cold water. Stir and enjoy.

2 cups fresh blueberries
1 wide strip lemon zest
2 cups applejack brandy (such as Laird's Jersey Lightning)
Simple syrup (for serving)
Sparkling wine or club soda (for serving; optional)
Special Equipment
One 32-ounce jar; 3 layers of cheesecloth

Steps:

  • Combine blueberries, lemon zest, and brandy in jar and seal tightly. Let sit in a cool dark place, shaking jar daily, until mixture is a deep purple color, about 1 month.
  • Strain mixture through cheesecloth into a pitcher or large bowl (do not press on solids or mixture will become cloudy) and add simple syrup to taste. Chill until cold, about 30 minutes. Serve cordial in small glasses.

½ lemon, zested
3 whole cloves
1 ½ cups vodka
¾ cup simple syrup

Steps:

  • Mash thawed blueberries with a fork in a bowl, then place into a 1-quart canning jar. Add the lemon zest, cloves, and vodka.
  • Seal the jar tightly with its lid and place in a cool, dark place. Allow the vodka to stand for 3 months, shaking the jar gently every few days.
  • After 3 months, strain out the blueberries, and filter the vodka through cheesecloth into another 1-quart jar. Pour in the simple syrup, seal the jar tightly with its lid, and shake until the syrup has dissolved.

1 cup all-purpose flour, divided

1 egg, beaten
1/2 cup butter, melted

Steps:

  • Place apples in a greased 11x7-in. baking dish. Top with blueberries. Mix brown sugar and 2 tablespoons flour; sprinkle over fruit. Combine sugar, baking powder, salt, cinnamon, nutmeg and remaining flour. Stir in egg with a fork until mixture is crumbly. Sprinkle over fruit; drizzle with butter. Simple. Cheap. No artificial anything. And Delicious! A wonderful cheap treat for your family's drink bottles. I created this after being unable to find a kid-friendly blueberry cordial recipe. I used frozen berries but fresh would do, of course! Time shown does not include the overnight steeping time, which is optional but advised to get the max flavour.

4 cups sugar
4 cups boiling water
3 cups blueberries, frozen
4 teaspoons citric acid

Steps:

  • In a large saucepan combine everything. Simmer over medium heat and stir with wooden spoon to dissolve the sugar. Mash the berries as they soften, with the spoon, or a potato masher. I tried an immersion blender which worked ok but the masher was the most effective.
  • Once dissolved, let cool, then steep overnight in the refrigerator. This will get the max flavour from the berries.
  • Next day, strain into a bottle (clean softdrink is perfect). I used a funnel with a wire mesh strainer over the top, and poured a little at a time. Squeeze the juice from the pulp through the strainer. Set pulp aside - delicious with icecream!
  • To reconstitute to a delicious drink, try 1 part cordial to 5 or 6 parts water. This will depend on how sweet you like your drinks.
  • KEEP IN REFRIGERATOR.
  • It makes 1.75 litres which will creat about 12 litres of drink.

  • Preheat oven to 375 degrees, with a rack in the lower third. Butter a 3-quart baking dish, and place on a parchment-lined baking sheet; set aside.
  • In a large bowl, whisk together flour, brown sugar, 1/3 cup granulated sugar, cinnamon, mace, and 1/4 teaspoon salt. Using a pastry blender, cut in butter until large clumps form. Using a rubber spatula, mix in oats. Set aside.
