OAT BRAN & BLUEBERRY MUFFINS WITH SPELT (VEGAN)

Oat Bran & Blueberry Muffins With Spelt (Vegan) image

"Veganized" (?) from the recipe on the package of oat bran. This also uses spelt flour instead of regular wheat, of course you could use regular flour instead. I was pleasantly surprised at how well these turned out - really light, maybe a little crumbly due to the spelt. In a nutshell, really good and all the benefits of the oat bran!

BLUEBERRY OAT BRAN MUFFINS

BLUEBERRY OAT BRAN MUFFINS image

Categories     Muffin

Number Of Ingredients 8

2 1/4 cups oat bran
3/8 teaspoons baking soda
1/4 cup chopped walnuts
3 egg whites, slightly beaten
2 tablespoons oil
1/2 cup honey
3/4 cup nonfat milk
1 cup fresh or frozen blueberries

Steps:

  • Preheat oven to 360 degrees. In a medium bowl combine oat bran with baking soda and mix well. Add nuts Combine egg whites, oil, honey and milk and pour into cereal mixture. Stir to blend well. Gently fold in blueberries. Divide mixture evenly into oiled muffin pans and bake at 350 degrees for 25 minutes. Cool muffins before removing from pan.

Tips:

  • Prep Your Ingredients: Before you start, measure and prep all the ingredients. This will ensure that you have everything you need and streamline the baking process.
  • Use Fresh Blueberries: Fresh blueberries give the muffins the best flavor and texture. If using frozen blueberries, thaw and drain them before adding to the batter.
  • Mix Dry Ingredients Properly: In a separate bowl, whisk together the dry ingredients (flour, sugar, baking soda, salt, and bran) until well combined. This ensures even distribution throughout the batter.
  • Mix Wet Ingredients Separately: In another bowl, whisk together the wet ingredients (eggs, milk, melted butter, and vanilla extract) until well combined. This helps prevent over-mixing the batter, resulting in tough muffins.
  • Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Over-mixing can make the muffins dense and dry.
  • Fold in Blueberries: Gently fold in the blueberries using a spatula. Avoid over-mixing, as this can break the berries and release too much juice, making the muffins soggy.
  • Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each cup about 2/3 full. This allows room for the muffins to rise in the oven.
  • Bake at Proper Temperature: Preheat the oven to 400°F (200°C) and bake the muffins for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
