Steps:

  • Preheat the oven to 410 degrees F (210 degrees C). Line a pie plate with 1 pie crust.

Pastry for single-crust pie (9 inches)
1/2 cup sugar
3 tablespoons cornstarch
1/8 teaspoon ground cinnamon
3 cups fresh or frozen blueberries
1/4 cup orange juice
CUSTARD:
1/2 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
1-1/4 cups whole milk
3 egg yolks
MERINGUE:
3 egg whites
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • Line a 9-in. pie plate with pastry; trim and flute edges. Line unpricked pastry with a double-thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a large saucepan, combine the sugar, cornstarch and cinnamon. Stir in blueberries and orange juice. Bring to a boil; cook and stir for 2 minutes or until thickened. 2 cups fresh blueberries
1/4 cup sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 eggs
2 egg yolks
1 teaspoon vanilla extract
1 cup whipping cream

Steps:

  • Pastry: flour the ball of pastry lightly, flatten it to 6 or 7 inch circle; put it on a floured pastry cloth.
  • With a floured rolling pin roll the pastry until it forms a circle about 13 ½ to 14 inches in diameter.
  • The dough will become very thin-it is important to keep it the same thickness all over.
  • Transfer dough to tart pan, centering it carefully.
  • Quickly ease the dough on the sides down into the pan, making the sides a little thicker.
  • Using scissors, trim the edges, leaving an even ½ to ¾ inch border standing up over the rim of the pan.
  • Fold in a narrow hem, about ¼ inch wide, folding toward the middle (not toward the outside) and leaving the rim of the pastry raised a bit above the edges of the pan.
  • **With pastry pincers, form a design on the rim, or with the dull side of a knife blade, form shallow ridges on an angle to decorate it.
  • Prick fork holes about ½ inch apart in the bottom of the pastry.
  • Place the tart pan in the freezer for at least 15-20 minutes.

1 pillsbury ready crust in a 10" pie plate
3 c sliced strawberries, blueberries and raspberries (put 1/4 cup of sugar in)
1 c heavy cream
2 Tbsp heaping tablespoons of flour
3 extra large eggs
4 Tbsp melted butter
1 1/2 c sugar

Steps:

  • 1. Place the ready made pie crust into pie place, flute the edges and polk with a fork on bottom and sides before berries go in. Slice straberries, put blueberries and raspberries in the bowl with 1/4 cup of sugar set aside. Beat the eggs and mix the sugar through. Add flour, melted butter and heavy cream, beat thoroughly. Place all berries in the pie crust and add the egg mixture of top. Preheat the oven to 325, bake 1 hour and turn up heat to 350 for an additional 20 minutes. Check for doneness after 10 minutes, oven may vary. Mine usually goes for 20. Enjoy.
