1 1/2 cups all-purpose flour (spooned and leveled)
1/4 cup ground flaxseed
2 tablespoons sugar
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine salt
1 1/2 cups buttermilk

1 cup fresh or frozen blueberries
Maple syrup, for serving

Steps:

  • In a large bowl, whisk together flour, flaxseed, sugar, baking powder, baking soda, and salt. Add buttermilk, egg, and butter and whisk until just moistened (batter should have some lumps; do not overmix). Fold in blueberries.

1/4 cup ground flaxseed
2 tablespoons sugar
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine salt
1 1/2 cups buttermilk
1 large egg, lightly beaten
1 tablespoon unsalted butter, melted, plus more for skillet and serving

Tips:

  • Use fresh blueberries. Fresh blueberries will give your pancakes the best flavor and texture. If you don't have fresh blueberries, you can use frozen blueberries, but be sure to thaw them before using.
  • Don't overmix the batter. Overmixing the batter will make your pancakes tough. Mix just until the ingredients are combined.
  • Let the batter rest for a few minutes before cooking. This will help the pancakes to rise and become fluffy.
  • Cook the pancakes over medium heat. This will help to prevent them from burning.
  • Serve the pancakes immediately with your favorite toppings. Some popular toppings include maple syrup, butter, fruit, and whipped cream.
