3 large eggs, separated
1 1/2 cups (355 ml) milk
1/4 cup (50 g) sugar
1 tablespoon (15 ml) pure vanilla extract
2 cups (240 g) all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons (9 g) kosher salt
3/4 cup (185 g) ricotta cheese, drained in a coffee filter or fine-mesh sieve
1/4 teaspoon cream of tartar (optional)
Nonstick cooking spray
1 pint (300 g) fresh blueberries or 2 cups (300 g) frozen blueberries, thawed
Pure maple syrup, for serving

  • In a large bowl, whisk the egg yolks with the milk, sugar and vanilla until well combined. Add the flour, baking powder and salt.   • Heat a griddle over medium heat and give it a 3-second spray with nonstick spray to coat. Dip a 2-ounce (56-g) ladle into the batter and ladle onto the griddle. Be sure to leave enough space between the pancakes to get your spatula in there to flip. Cook over medium heat until the bottoms are golden brown and the pancakes are just beginning to set, 1 to 2 minutes. Sprinkle each pancake with a few blueberries, pressing them in gently. 3/4 cup whole-wheat flour
3/4 cup white flour
1 teaspoon baking powder
2 tablespoons sugar
Pinch of salt
1 egg
3 tablespoons melted butter
1 cup skim milk
1 cup blueberries
Warm maple syrup

Steps:

  • Mix the flours, baking powder, sugar and salt together in a bowl. In a separate bowl beat the egg and stir in two tablespoons of the butter and milk. Stir the egg mixture into the flour mixture only until the ingredients are incorporated. Stir in the blueberries.
  • Heat a griddle or a large nonstick skillet. Preheat oven to 150 degrees.
  • Brush the skillet or griddle lightly with butter, then, using about three tablespoons of the batter, form one pancake in the pan. 1 tablespoon plus 2 teaspoons sugar
1/4 teaspoon grated lemon zest
Pinch of ground cinnamon
2 large eggs, separated
2/3 cup nonfat or part-skim ricotta
1/4 cup low-fat milk
6 tablespoons all-purpose flour
1/4 teaspoon baking powder
Pinch of salt
2 teaspoons canola oil
Any combination of fresh berries, for garnish (optional)

Steps:

  • In a small saucepan over medium heat, cook blueberries, 2 tablespoons water, 1 tablespoon sugar, the lemon zest, and cinnamon, stirring frequently, until syrupy, about 5 minutes. Remove from heat.

3 eggs, yolks and whites separated
3/4 cup ricotta cheese (dryer, large curd variety if can find)
1/4 cup sugar
1 tablespoon sugar
3/4 teaspoon salt
1 tablespoon vanilla
1/2 teaspoon vanilla
2 1/4 cups milk
1 3/4 cups flour
1 1/4 teaspoons baking powder
1 1/2 pints blueberries

Steps:

  • In a large bowl, whisk together the egg yolks and ricotta cheese so that there are no large lumps of cheese, but make sure the mixture does not become too smooth (this will make the pancakes wet and grainy). Whisk in the sugar, salt and vanilla, then the milk.
